Sundays are always days when I like to spend a little bit of extra time in the kitchen preparing a dinner for my family. I also usually do prep work for meals throughout the week too like cutting vegetables an slicing meats if necessary. This past weekend, we made roasted pork tenderloin with root vegetables and it was delicious.
One thing I love about this recipe is how easy it is to cook. After a little bit of chopping, I put it into the oven and I am free to get everything else ready for the coming week. The Smithfield® Marinated Pork I picked up at Kroger takes care the first step of cooking for me because it comes pre-marinated in delicious flavors like Garlic and Herb. It is so easy to combine it with a few simple ingredients for a fantastic meal. Plus it is the perfect option for when we get tired of chicken and beef.
Ingredients for Roasted Pork with Root Vegetables:
1 Smithfield® Garlic and Herb Marinated Pork Loin
2 potatoes, cut into small pieces
3 parsnips, sliced
2 cups baby carrots
2 Tbsp whole grain mustard
1 Tbsp olive oil
4 sprigs fresh rosemary
Let’s Make It:
1) Preheat oven to 400 degrees. Lightly spray a large casserole dish with nonstick cooking spray. Place pork tenderloin into dish.
2) In a large bowl, combine potatoes, parsnips, carrots, mustard and olive oil. Stir to combine. Add to casserole dish. Place rosemary sprigs around the pork.
3) Cook for 30-40 minutes or until vegetables are tender and pork is cooked through.
