Bacon Cheese Oatmeal Breakfast Cookies are the perfect option for the coming busy mornings, as you prepare for the kids to go back to school and on the bus!
One of the most difficult things for us this time of year is getting a good breakfast. Now that school has started, I need to make sure the kids have something to keep them full and satisfied but that is easy to eat during the busy morning rush to make it to the bus stop.
Everyone in my family loves breakfast cookies so I decided to make some savory Bacon Cheese Oatmeal Breakfast Cookies as the perfect start to the morning.
This breakfast cookie recipe is delicious and can easily be made at the beginning of the week and enjoyed all week long. They also make perfect additions to a school lunch box for the kids. I love using oats too because they are rich in dietary fiber and an incredibly versatile whole grain. Bob’s Red Mill oats are kiln roasted to give them a wholesome flavor.
This healthy cookie recipe uses rolled oats which are rolled flat to produce the flakes most people recognize. Steel cut oats tend to be used more for breakfast cereals than baking but they are still a great source of fiber.
Everyone in the family loves these and I get requests for them a few times a week. Even though the ingredient list looks a little long, they are so simple to make and we can enjoy them all week long with just one batch.
Mathlete loves grabbing them on his way out to the door too. That is, if the kids left any when they left for the bus.

- Baking sheet
- Mixing bowls
- Cookie scoop
- Cooling rack
- 1 cup Bob's Red Mill Old-Fashioned Oats
- 1/4 cup Water
- 1/3 cup Coconut Oil
- 1/4 cup Brown Sugar
- 1 Egg lightly beaten
- 1 cup All Purpose Flour sifted
- 1 tsp Salt
- 1/4 tsp Baking Soda
- 1.5 tsp Fresh Thyme chopped
- 1.5 tsp Fresh Rosemary chopped
- 1/2 tsp Cracked Black Pepper
- 1/2 cup Grated Parmesan
- 1/2 cup Shredded Cheddar Cheese
- 3 slices Bacon cooked and crumbled

Preheat oven to 350 degrees. Line a large, rimmed baking sheet with parchment paper.

In a large mixing bowl, combine oats and water.

In a small bowl, combine coconut oil, brown sugar and egg. Mix into oats and stir to combine. Set aside.

In a medium sized bowl, combine flour, salt, baking soda, herbs and black pepper. Stir gently to combine. Stir in cheeses.

Working in batches, mix the flour mixture into the oats mixture. Add bacon and stir just until combined fully.

Scoop about 2 tablespoons (I use a meatball scoop) of dough onto baking sheet and flatten with your hand. Sprinkle with additional salt if desired.

Bake in preheated oven for 15 minutes or until lightly browned around the edges. Let cool on pan for 1-2 minutes and then transfer to nonstick cooling rack.
