January is all about saving money and eating healthier for me so I am so excited to share with you a great recipe that costs less when shopping at ALDI. While this post was sponsored, all thoughts and opinions are my own.
After enjoying so many great dishes and desserts during the holiday season, I always try to use the beginning of a new year to reset and focus on eating healthier. I tend to take my lunch to the office each day and this easy and light chicken salad is one of my top things to pack right now.
In addition to focusing on eating lighter, I also try to add in small changes that help me save money too. Shopping at ALDI helps me buy higher quality meats and produce for lower prices making it easy to save money and make healthier choices in my diet. ALDI stores focus on saving customers money by keeping stores smaller than a typical store and focusing staff on serving shoppers through their cart rental system and shelving display boxes. ALDI recently made a big move to get rid of added MSG, certified synthetic colors and partially hydrogenated oils from ALDI exclusive brands. Plus, they offer lots of organic fresh meat options at much lower prices (up to 50% less) than the national brand equivalent. On my recent trip, I was able to get everything I needed for my easy and light chicken salad recipe.
National Brand Items
A lot of people create their chicken salad with mayonnaise or a blend of mayonnaise and mustard and I have done this in the past too because buying a bunch of ingredients for a recipe can be costly. With the great prices and selection at ALDI, I was able to make my chicken salad lighter by mixing in lemon juice and Friendly Farm Greek yogurt without seeing an increase in cost. In fact, it was still less expensive to buy these ingredients than the national brand equivalent of the ingredients for my old recipe that didn’t include the yogurt or lemon. For example, the ingredients for this recipe cost $13.43 at ALDI and $23.59 for the comparative national brands.
Ingredients for Easy and Light Chicken Salad:
Serves 4-6
2-3 Red Wheelbarrow Boneless, Skinless Chicken Breast, cooked and shredded
1 Tbsp Burman’s mayonnaise
1/4 cup Friendly Farms Greek nonfat yogurt
1 Tbsp fresh lemon juice
1 Tbsp Burman’s yellow mustard
2 Tbsp grapes, sliced
2 Tbsp Southern Grove dried cranberries
Stonemill Salt and Stonemill Pepper to taste
Let’s Make It:
1. In a large bowl, combine Burman’s mayonnaise, Friendly Farms Greek nonfat yogurt, lemon juice and Burman’s yellow mustard. Stir in shredded chicken. Season with salt and pepper. Refrigerate for 15 minutes.
2. Stir in sliced grapes and Southern Grove dried cranberries.
The substitution of Friendly Farms Greek nonfat yogurt, found at ALDI, for most of the mayonnaise in this recipe really lowers the overall fat and calories making this a perfectly delicious and lighter lunch option. I usually eat it on two slices of L’oven 100% whole wheat bread.
