When you are a working mom of 2 busy kids, relaxing is pretty hard to do. Our version of relaxing tends to come in the form of being able to sit down for more than two minutes and not drinking/eating on the go. With the kids heading back to school, I am looking forward to having a few extra hours a week to enjoy simple things like everything bagel chips, veggie cream cheese, and a tall glass of iced tea.
I grew up in the southern part of the state where the tea is always sweet and always super cold. In fact, when I go back home, I always forget that I have to specify because the norm is sweet tea. When I moved “up north,” it was almost impossible to find sweet tea, so I started drinking unsweetened with a splash of sweet tea in it. Ingredients for Everything Bagel Chips:
2 Everything Bagels, sliced into rounds
3-4 Tbsp olive oil
Everything Seasoning:
1/2 Tbsp poppy seeds
1/2 Tbsp sesame seeds
1/2 Tbsp dried minced garlic
1/2 Tbsp dried minced onion
1 tsp kosher salt
Let’s Make It:
1. Preheat oven to 350 degrees. Line a rimmed baking sheet with nonstick foil.
2. In a small bowl, mix together all ingredients for the everything seasoning.
3. In a large bowl, combine bagel pieces and olive oil. Toss to coat. Spread bagel pieces on prepared baking sheet. Sprinkle with everything seasoning.
4. Bake for 10-15 minutes or until lightly browned. Remove from oven and let cool. Store in airtight container for up to 3 days.
Ingredients Vegetable Cream Cheese Dip:
12 oz cream cheese, softened
2 Tbsp Greek yogurt
1/2 green pepper, diced
1/2 red pepper, diced
1 carrot, peeled and shredded
2 green onions, sliced
Let’s Make It:
1. In the bowl of a mixer, beat together cream cheese and yogurt. Stir in green pepper, red pepper, carrot and green onions. Refrigerate until ready to eat.
I love this snack because I can make it at the beginning of the week and enjoy it for several days.
The bagel chips are also great on the go along with a bottle of Straight Up Tea!
