Summer vegetables are some of my absolute favorites. From zucchini to corn, you can’t beat the summer vegetables that show up at the farmer’s market or in the store. I was getting ready for our block party over the weekend and the hardest decision I was deciding what to make because all the vegetables just looked so good. Summer corn recipes are definitely at the top of my list right now so I thought I would share a few great ones that I found while searching around for something to take to the block party.
I grew up eating corn on the cob at almost every summer meal. My grandfather grew it in their garden and so we always had a TON. My daughter shares my love of corn on the cob so it is always fun to get some and cook it. Of course, I always buy extra so I can use it for some of these delicious corn recipes. While these recipes are typically made with fresh, summer corn, you could definitely use frozen or canned in place of it to make sure you can enjoy these delicious corn recipes all year long.
