Don’t scratch your head and wonder what to do with leftover turkey this Thanksgiving. Use it to create delicious turkey spinach lasagna rolls.
Thanksgiving is always a great time of year for family. But it also means there is typically a lot of leftover turkey. Instead of wondering what to do with leftover turkey, go ahead and grab a few recipes, like these turkey spinach lasagna rolls, to use it.
I originally created this recipe as a spinach lasagna recipe. But, I love making lasagna roll ups instead because they cook so much faster and are great for serving easily too.
Lasagna rolls are so easy to make. You start by cooking the lasagna noodles and then you layer the ingredients on top before rolling.
The inside of these spinach lasagna roll ups has a mixture of leftover turkey, chopped spinach and cheese.
I use shredded Swiss cheese for these turkey spinach lasagna rolls. You could substitute a cheddar if you prefer.
Once you have all the ingredients in, you simply roll the noodle to create the spinach lasagna roll up.
The sauce for these turkey spinach lasagna roll ups is a delicious cheese sauce. A small amount gets ladled into the bottom of the baking dish before the lasagna rolls are added.
The remaining cheese is added on top before more shreded cheese is added. Then, the rolls get baked.
These turkey spinach lasagna roll ups are freezer friendly too! You could stop at this point and freeze until you wanted to enjoy them. If not, pop them in oven for a delicious dinner!

Turkey Spinach Lasagna Rolls
Turkey spinach lasagna roll ups are the perfect solution for what to do with leftover turkey after Thanksgiving.
Ingredients
- 4 Tbsp butter
- 4 Tbsp flour
- 2 cups milk
- 2 cups vegetable or chicken broth
- 4 Tbsp Dijon mustard
- 2 cups shredded Jarlsberg cheese
- 8 lasagna noodles {not the no boil kind}
- 1 10 oz box of frozen chopped spinach, thawed and squeezed of excess moisture
- 2 cups leftover turkey, shredded or cubed
- 2 cups shredded Swiss cheese
Instructions
- Preheat oven to 350 degrees. Spray a casserole dish with nonstick cooking spray and set aside.
- Cook lasagna noodles according to the package instructions. Rinse with cold water and lay flat on nonstick foil or parchment paper.
- In a heavy bottomed pot, melt the butter over medium heat. Whisk in flour and cook for one minute.
- Whisk in chicken broth, milk and Dijon mustard. Bring to slow boil and whisk until thickened, about 3-5 minutes. Remove from heat and stir in Jarlsberg cheese.
- Ladle 1/2 cup of cheese sauce into the bottom of the prepared pan. Reserve 1/4 cup of shredded Swiss and frozen spinach.
- Divide the turkey, remaining spinach and Swiss cheese among each lasagna noodle. Roll up into a pinwheel shape and place on top of the sauce in the prepared dish. Top with reserved spinach. Ladle a spoonful of sauce on top of each roll and top with reserved shredded cheese.
- Bake, covered with foil, for 15 minutes. Remove foil and bake for another 5 minutes.
