Jalapeno poppers are one of those appetizers that you know EVERYONE will love. It is the perfect combination of spicy and cheesy in a little handheld bite. I see them at so many parties and actually served them for the first time this year at our annual Christmas party. Then, I started thinking about a way to easily take all those flavors on the go for tailgating or potluck parties {March madness, anyone?}. Turning the traditional appetizer into Jalapeno Popper Dip that you make ahead and bake whenever you want OR throw in the crockpot was what I came up with!
The recipe below for the dip includes bacon but, if you wanted to go vegetarian, you could totally skip the bacon and replace it with a pinch of salt. You won’t lose much flavor and the dip will still be delicious.
What You’ll Need:
6-8 jalapenos
4 oz cream cheese, softened
2/3 cup shredded pepper jack cheese
3 Tbsp ranch dressing
4 pieces of cooked bacon, crumbled
1/4 cup panko bread crumbs
1/2 tsp paprika
1/4 tsp salt
1/2 tsp garlic powder
2 Tbsp Parmesan cheese
Let’s Make It:
1) Preheat the oven to 350 degrees. Spray a medium sized baking dish with non-stick cooking spray.
2) Seed and finely chop your jalapenos. If you want a little more heat to the jalapenos, feel free to leave the seeds in.
3) In a medium bowl, combine all of your ingredients and mix well. Put into prepared baking dish and bake for about 15 minutes or until hot. Top with additional jalapeno bits, bacon pieces and/or shredded cheese if desired.
This dip was awesome served with tortillas chips.
You could also serve it with triscuits or get healthy and throw some celery and carrots out there!
