So, I shared all about my first experiences with Irish coffee during a trip with Mathlete way back in 2003 and the resulting cupcake. Today, I’m going to focus on something a little more near and dear to Mathlete’s heart: Guinness cupcakes with Irish Cream frosting…sort of like a car bomb in a cupcake.
A lot of people equate the taste of a car bomb to that of chocolate milk. I don’t necessarily agree but then again, I’m not really a Guinness fan to begin with. These cupcakes are chocolate filled with a chocolate ganache and then topped with a yummy Bailey’s Irish cream frosting. I also topped mine with some little chocolate pieces for fun.
This is another one that has a lot of steps so you’ll get the recipe card at the end along with the directions written out.
What You’ll Need:
Cupcakes
1 box chocolate cake mix
1/2 cup vegetable oil
3 eggs
1 1/4 cup Guinness beer
Ganache
8 oz bittersweet chocolate
2/3 cup heavy cream
2 Tbsp butter
2 tsp whiskey
Frosting
1 stick of unsalted butter, room temperature
2 1/2 – 3 cups of confectioner’s sugar
3 Tbsp Bailey’s Irish Cream {1 airplane sized bottle}
Let’s Make It:
1) Preheat oven as directed on the cake mix box. Line 20-24 cupcake cups with liners.
2) In a mixing bowl, combine cake mix, oil and eggs and mix until combined. Slowly pour in Guinness and mix on low for 30 seconds. Turn mixer speed to medium and mix for one minute. Divide the batter equally among the cupcake cups and bake according to the package directions. Let cool completely.
3) In a small saucepan, melt butter over medium heat. Add chocolate and stir until melted and smooth. Stir in cream and whiskey. Let cool.
4) Beat butter in mixer until smooth and fluffy. In 2-3 Tbsp increments, add powdered sugar letting each prior fully incorporate into the frosting before adding more. After 2 1/2 cups of sugar, beat in Irish cream. Add additional powdered sugar if needed for desired consistency.
5) Using a small paring knife, cut a small piece out of the top of each cupcake. Fill with a small amount of ganache and replace the cupcake piece.
Frost cupcakes as usual.
If you want to make little chocolate pieces to go on top, place a piece of parchment paper on top of a wine bottle.
Melt chocolate chips in a plastic bottle and squeeze onto top of the parchment paper. Let set and break into pieces.
Place each of the pieces on top of the cupcakes.
