Last week, I shared with you my first intentional gluten free recipe. I say intentional because my friend alerted me to a few recipes on here that are already gluten free. Today, though, I am sharing with you a recipe that is a favorite of mine that also happens to be gluten free: ham and vegetable fried quinoa.
This dish is a lot like a fried rice dish with the rice switched out for quinoa and a lot less fat involved. I love fried rice but, once I made this, I was in love with the quinoa version too. Be sure, before cooking your quinoa to rinse it and check it over for little stones.
- 2 cups cooked quinoa
- 2 tsp grapeseed oil
- 1 cup peas and carrots
- 1 cup diced ham
- 1/2 cup tamari
- 2 tsp grated fresh ginger
- 3 Tbsp brown sugar
- 2 eggs
- scallions

In a large skillet, heat oil over medium heat. Add ham, peas and carrots and saute for about 4 minutes, stirring frequently.

Add quinoa and cook, stirring frequently, for about 3 minutes.

In a medium bowl, combine tamari, ginger and brown sugar. Stir well. Add about 3/4 of tamari mixture to pan and stir well to combine. Remove quinoa mixture and set aside.

Spray pan with nonstick cooking spray. Add eggs and scramble. Cook until eggs are set. Add eggs to quinoa mixture and stir.

Top with chopped scallions and serve with remaining tamari mixture.
This dish the perfect Chinese take out replacement. You can easily make it at home and you have complete control over what goes in it. It is definitely an awesome option when you need to go gluten free but still want all the flavor of delicious fried rice.
