It is only mid-June but I’ve talked a lot about how I like to cook on the grill already. So, it is probably no surprise that today’s recipe is for grilled fruit kabobs. These grilled fruit kabobs are special though because they are basted with a citrus mint glaze while they are grilled which gives them an extra punch of flavor.
The great thing about fruit kabobs is that they are so versatile. You can pick just about any fruit that is on sale and put it on the grill. For these, I choose some stone fruits along with strawberries and pineapple. Of course, the mint is a key ingredient to making these extra delicious.
- 2 peaches cut into large pieces
- 3 cups pineapple chunks
- 3 cups hulled strawberries {halve large ones}
- 3 nectarines cut into large pieces
- Marinade;
- 2 cups pineapple juice
- 3/4 cup orange juice
- 1/2 cup cider vinegar
- 1/3 cup lime juice
- 3 Tbsp finely chopped mint

Combine pineapple juice, orange juice and cider vinegar in a small saucepan over high heat. Bring to a boil and then reduce heat. Simmer for 25 minutes. Separate 1/2 cup of juice mixture and cool. Reserve remaining juice separately. Add lime juice and mint to the 1/2 cup of cooled juice mixture.

Thread fruit onto skewers. Pour cooled juice mixture with mint over fruit and turn to coat.

Heat grill to medium heat. Place skewers on grill and brush with mint juice mixture while cooking. Cook for 2-3 minutes before turning. Brush with mint juice mixture and cook for another 2-3 minutes. Serve with reserved juice on the side.
I took my fruit off the skewer and added a dollop of whipped cream on top before eating. Yummy!

I love this idea because I have an oral allergy to most fruits (sucks), but once they are cooked, that magically goes away! I need a grill, and then I need to try this!
