Picnic season is in full force here because the weather is nice {not too hot yet} and it is such a great time to be outside. We are so lucky to have a bunch of different places to go for picnics around here and we really try to take advantage of them whenever we can. Of course, sometimes we just like having sandwiches and other typical picnic fare at home for lunch too. Last year, I shared one of my favorite sandwiches and I wanted to bring them back this year because they are just so delicious. I actually had one of this balsamic chicken sandwich for lunch today and I was reminded exactly how tasty they are!
I made a change to the bread for the sandwich this time around and, during lunch today, I added some smashed avocado too and it was so delicious. You can easily add and take away things from the sandwich to make it your own. I never eat mine with tomatoes because I just don’t like them and I sometimes add sprouts. It is so versatile.
- 1 cup cooked shredded chicken)
- 1/2 cup balsamic vinegar
- 1 Tbsp brown sugar
- 1/2 Tbsp soy sauce
- 1/2 cup mayonnaise
- 3 Tbsp Dijon Mustard
- 1 tsp minced garlic
- spreadable Brie cheese
- choice of bread or roll
- lettuce
- tomato sliced
- smashed avocado
- spouts

In a small saucepan, combine the balsamic vinegar, brown sugar and soy sauce. Bring the mixture to a boil. Lower the heat and simmer until the mixture is thick enough to cover the back of the spoon.

Combine the mayonnaise, mustard and garlic together in a small bowl.

Spread the mustard mixture on one side of your roll and the other side with Brie cheese. Top one half of the sandwich with chicken and drizzle with balsamic glaze. Add any toppings to the opposite side and put the sandwich together.
