You already know wine slushies are popular around our house. For time to time, I like to step outside of the wine game though and enjoy a nice cocktail or, if it is a weekday, a mocktail! When we were in Miami, I tried some of the Cascade Ice Sparkling Waters and was instantly in love. I don’t do the plain water thing so well and need flavors in it for me to actually drink it on a regular basis. The key lime pear version was one of my favorites and I’ve been using it in a key lime pear cocktail ever since.
This is one of those cocktails that you can easily remove the alcohol from too and make it a delicious summer refresher! My kids liked the mocktail version so I’ve been making two batches at a time I can enjoy my cocktail and they can have a tasty drink too.
- 4 oz ginger, peeled
- 1 cup water
- 1 cup sugar
- 1/2 cup lime juice
- 1 shot white rum
- 1/2 cup key lime pear sparkling water
- Ice
- Puree ginger.
- In a small pan, combine water and sugar. Stir and bring to simmer over medium heat. Stir until sugar is dissolved. Simmer for 10-15 minutes. Remove from heat and add pureed ginger. Cover and let stand for 20 minutes. Stir in lime juice. Strain.
- In a glass, combine 2/3 cup of ginger lime syrup, a shot of white rum and 1/2 cup of key lime pear water. Stir. Add ice and enjoy.
The ginger lime syrup keeps great in the fridge so just transfer to it a jar and bring it out whenever you want a cool, refreshing addition to your water, soda or cocktail. I have been keeping more flavored sparkling waters around the house to encourage me to drink more water too. The key lime pear version is a favorite 🙂
