One thing that blogging has brought me is an introduction to lots of other blogs and even actually meeting some of the faces behind those blogs. I got to meet Katie this past April and she is super sweet and so amazingly talented. I am so thrilled that she is here sharing her Poppyseed Lemonade Muffins with you all today.

Hi Just Us Four readers! I’m Katie from Made to be a Momma. Over at Made to be a Momma you will find everything from diy sewing tutorials, home decor, kids crafts and recipes. One of my favorite things to do is to cook and bake for my family. In my life my motto is “keep it simple.” I don’t have time every night to cook a full course meal or spend countless hours in the kitchen. One of go to “must-haves” to make dinner a bit more special is homemade rolls or muffins. I especially like making muffins because they don’t require any time to rise like some recipes for rolls do. I love all the variety of muffins there are- you can have sweet, spicy and even savory. They can compliment any meal.
Two of my favorite flavors are lemon and blueberry. Today I wanted to share with you a delicious Poppy Seed Lemonade Muffin. It has the perfect amount of flavor and it makes your house smell delicious! This recipe originally called for lemonade concentrate but I used a lemonade drink mix instead but feel free to use lemonade concentrate instead if you would rather. I like to add my own spin off of recipes all the time so don’t be afraid to play around a little bit 🙂
- 2 cups flour
- 5 TBSP sugar
- 4 tsp poppy seeds
- 3 tsp baking powder
- 1/2 tsp salt
- 2/3 cup lemonade drink mix OR 1/2 cup of lemonade concentrate
- 1/2 cup milk
- 1/3 cup butter melted
- 1 egg

In a large bowl combine flour, sugar, poppy seeds, baking powder and salt.

In another bowl combine lemonade drink mix ( or concentrate), milk, butter and egg until blended.

Stir into dry ingredients just until combined.

Fill paper lined muffin cups.

Bake at 400 degrees for 15 minutes or until a toothpick inserted comes out clean.
These muffins don’t have an over powering taste of lemon so if you like more of a lemony flavor–which I normally d0- you could also add some lemon juice and lemon zest! I will probably do that the next time I make them.
