So, school started this week. So did gymnastics, play classes for my youngest and just about every other activity you can possible cram into a week. That puts time at a premium and makes going out to eat look really attractive when it is 5pm and I have no idea what to make for dinner. One thing I know is always a hit in our house is stir fry and rice so threw together some chicken satay with orange jasmine rice the other night.
Now, I know you read that and thought “there is no way she just threw together jasmine rice for dinner.” True, jasmine rice does typically require a pretty long cooking time but Success® Rice has created a boil in bag jasmine rice that comes out perfectly every time and only takes 10 minutes to make.
One of the great things about stir fry recipes is that they cook quickly and are full of flavor. I love the combination of the peanut flavors and the orange in this recipe.
What You’ll Need:
2 bags of Success® Jasmine Rice
2 Tbsp orange zest
2 Tbsp avocado oil
1 1/2 lb chicken breast, cut into strips
3 cloves garlic, minced
1 onion, sliced
1 bell pepper, sliced
2/3 cup shredded carrots
1/2 cup snow peas, trimmed
4 Tbsp peanut butter
4 Tbsp soy sauce
3 tsp ground, fresh ginger
1 tsp crushed red pepper
1/2 cup orange juice
3 tsp cornstarch
3 tsp water
Let’s Make It:
1. Cook Success® Jasmine rice according to package instructions. When finished, combine with orange zest in a bowl and set aside.
2. While rice cooks, heat avocado oil over medium heat. Add chicken breast and cook until done. Remove from pan and set aside.
3. Add onion, garlic, bell pepper, and carrots to pan. Cook for 5 minutes.
4. In a small bowl, combine peanut butter, soy sauce, ginger, crushed red pepper and orange juice. Stir well to combine. Add to pan and bring to a boil. Simmer for 3 minutes. Add snow peas and cook for an additional 2 minutes.
5. Whisk together cornstarch and water. Add to pan and cook, stirring constantly, for 1 minutes or until thickened.
6. Serve stir fry over orange Jasmine rice.
This was such a huge hit in our house. I will definitely be making it again because it was so easy and tastes amazing.
