Every Christmas, I make a breakfast casserole. It is the perfect thing for us to let cook on Christmas morning while we gather around the tree see what Santa has brought. My favorite version is one that I can put together the night before and pop in the oven when I first wake up.
As I focus on healthier choices, I find myself swapping out things like potatoes for sweet potatoes and skipping bread all together. Knowing I will be eating plenty of homemade donuts and chocolate fudge on Christmas day, I figure I should also have a healthier option like this Paleo Overnight Breakfast Casserole on hand as well.
The great thing about this paleo breakfast casserole {well, besides the way it tastes} is that it is pretty healthy. You can easily make it the night before or in the morning depending on your schedule.
The paleo overnight breakfast casserole is perfect for meal prepping too. I make it on the weekend and then take each day of the week for breakfast. Definitely a super versatile paleo breakfast option.
To keep this paleo when I originally made it, I used sweet potatoes. However, since creating this recipe, the paleo diet has started allowing potatoes a little more often so you could totally use those instead.

What you’ll need for this recipe:
- 1 lb nitrate free sausage
- 1 tsp garlic powder
- 1/2 tsp thyme
- 1/2 tsp sage
- 1/4 tsp crushed red pepper
- 1 onion diced
- 4 sweet potatoes peeled and cubed
- 1 green bell pepper diced
- 9 eggs
- 1/2 cup coconut milk
- Salt and pepper to taste

Cook sausage in a large pan over medium heat, stirring to crumble. Add spices, onion, green pepper, and sweet potatoes. Cook, stirring occasionally, for 5-7 minutes. Remove from heat and cool slightly.

Spray a 9x13 baking dish with nonstick cooking spray. Spread sweet potato and sausage mixture in the bottom.

Whisk together the eggs and coconut milk. Pour over sausage mixture. Cover and refrigerate overnight.

In the morning, remove from the refrigerator and let sit on the counter while oven preheats to 350 degrees. Bake, covered with foil, for 35 minutes. Remove foil and bake for an additional 10 minutes.
You can bake this immediately and just reduce the overall cooking time to 35 minutes {25 with foil and 10 without}.
