Every year, after we’ve recovered from the holidays, Mathlete and I start talking about what our next social event is going to be. Sure, my birthday is in early February but we usually like to have a low-key get together at our house before then. The logical choice is a party to watch the Big Game since a) we love football and b) it is the first major social event of the year. He is in charge of TV stuff and I am in charge of food. Because everyone is so interested in the plays being made on the field, it can be hard for the food to get much attention. So, I wanted to wow everyone with some delicious food and started off with double chocolate SNICKERS® brownies.
I always like to test out any new recipes before our parties so I grabbed the supplies for these brownies while H was in gymnastics. The SNICKERS were practically calling my name as I was trying to settle on exactly what to make.
Ingredients for Double Chocolate Snickers Brownies:
4 oz semi-sweet chocolate, melted
4 oz dark chocolate, melted
2/3 cup olive oil
1 cup brown sugar
1/2 cup sugar
4 eggs
1 cup flour
3 tsp vanilla extract
2 tsp salt
1 1/2 cup dark chocolate chips
1/2 cup caramel sauce
20 SNICKERS minis, chopped
Let’s Make It:
1) Preheat oven to 350 degrees. Line an 9×9 baking pan with parchment paper.
2) In a large bowl, mix together the melted chocolate and olive oil. Whisk in the eggs, sugars and vanilla extract. Add flour and salt. Stir until just combined being careful not to over mix. Fold in dark chocolate chips. Spread 1/2 of the batter into the bottom of the prepared pan.
3) Bake for 10 minutes. Remove from oven and top with caramel sauce and chopped SNICKERS. Cover with remaining brownie batter and return to the oven.
3) Bake for 40 minutes in oven. A toothpick should come out clean when inserted into the middle. Let cool completely before slicing.
These brownies were amazing! I could tell how gooey and chocolatey they were as I was slicing them. The mixture of chocolate, peanuts and caramel is a winner! I can’t wait to make them again for our party!
Ok, so now you know one of the things making an appearance in our starting line up this year for the big game party…what are you making? I’d love to hear some of the things on your menu.
