Our local farmer’s market opened this past weekend. I was super psyched because it means warmer weather is here for awhile and I can get lots of fresh fruits and vegetables easily. I shared this recipe over on Allyson’s blog during her much deserved maternity break last year. I wanted to share it here too {in case you missed it there} so you could pick up a watermelon on your next shopping trip and enjoy this watermelon goat cheese salad. Of course, watermelon is one of THE summer fruits so you can make this salad all summer long.
I know there are tons of watermelon and feta salads out there. I’m a HUGE goat cheese fan though so I decided to change up the cheese in the salad. To add some more complex flavors, I also tossed in peppery arugula and a delicious balsamic glaze. I keep a bottle of this glaze in our fridge all the time and use on everything from sandwiches to strawberries!
Watermelon Goat Cheese Salad Ingredients:
1 cup balsamic vinegar {get really good quality}
1/4 cup brown sugar
3 cups watermelon cubes
1 cup goat cheese crumbles
1/2 cup roughly chopped arugula
Let’s Make It:
1) Combine the vinegar and brown sugar in a small pan over medium heat. Bring to a boil; stirring constantly until sugar is completely dissolved. Reduce the heat to low and simmer until the glaze is reduced by half, about 20 minutes. Let cool.
2) Toss together the watermelon, arugula and goat cheese in a large bowl. Drizzle with cooled balsamic glaze just before serving.
This salad is awesome because it requires so little prep time. You can even make the glaze ahead of time and store it in the refrigerator until you are ready to use. Just take it out about 10 minutes before you need it.

What a delicious flavor combination- I once had a Watermelon Salad with Feta (NYC restaurant week at Union Square Cafe about a million years ago!) and it was so good that I still remember the details and flavors! I bet it would have been even better with goat cheese- I cannot wait to try this!
