Summer is here with the hot temperatures and long days. On summer nights, I want quick and easy recipes that my family will love. But, I don’t want to sacrifice their well rounded meals either. So, I turn to options like pasta dishes that cook quickly but also incorporate vegetables too. This summer pasta with shrimp is the perfect quick summer night meal that also has plenty of vegetables even though they might not be so obvious {i.e. this kids will still actually eat it}!
The wonderful thing about pasta is that it cooks so quickly! For this recipe, you cook the pasta while the shrimp cooks and then all you need is a few extra minutes until the whole thing is done. So, in about 15 minutes, you have a family friendly meal ready to go that also sneaks a little bit of extra vegetables into those picky eaters that might join you are the table. We use Ronzoni Garden Delight pastas because they have one serving of vegetables for every 4 oz portion of pasta.
Summer Pasta with Shrimp Ingredients:
1 box Ronzoni Garden Delight Tri-Color penne
1 Tbsp salt
1 Tbsp oil
3/4 lb shrimp, peeled and deveined
1 pint grape tomatoes, halved
1 cup spinach, roughly chopped
2 cloves garlic, minced
2 small onions, chopped
1/4 cup butter
Juice and zest of 1 lemon
1/4 cup reserved pasta water
Parmesan cheese
Let’s Make It:
1) Bring a large pot of water to boil. Add salt and pasta to water. Stir. Cook for 4 minutes. Reserve 1/4 cup of pasta water and drain. Add spinach on top of pasta and put lid on.
2) While pasta boils, heat oil over medium heat in a large saute pan. Add shrimp and cook for 3 minutes on both sides. Transfer to a bowl.
3) Add 1 Tbsp butter. Once melted add onions and garlic and saute for 4-5 minutes or until softened. Add reserved pasta water and lemon juice. Bring to a boil and then simmer for 2-3 minutes.
4) Add onion mixture and shrimp to pot with pasta and spinach. Add remaining butter. Over low heat, cook, stirring frequently, until butter is melted. Add tomatoes and cook for an additional 2-3 minutes until heated through. Serve topped with lemon zest and freshly grated Parmesan cheese.
This pasta dish goes great with some simple Italian bread or a small salad. I just love how quickly it is to make and the taste is amazing. My whole family loved it.
