One pot meals are my favorite. They really make it easy to get dinner done without a lot of dishes to clean up in the aftermath. On a lot of weeknights, I end up being the one to get the dishes in the dishwasher so I appreciate any little bit of help I can get. My favorite dish right now is paleo one pot chicken and kale.
This recipe is so simple but, because the ingredients are fresh, it tastes amazing. My whole family loved this dish and I loved how was to make.
One Pot Chicken and Kale Ingredients:
2 Tbsp coconut oil or ghee
4 chicken breast
1 can quartered artichoke hearts
1 sweet onion, sliced
2 carrots, sliced
1 sweet potato, thinly sliced
1 cup kale, roughly chopped
1/2 cup chicken broth
2 Tbsp lemon juice
1 lemon, sliced
Let’s Make It:
1) Preheat oven to 425 degrees.
2) Heat coconut oil or ghee in an oven safe pan over medium heat. Season chicken with salt and pepper and place in pan. Cook for 5 minutes on each side.
3) Add artichoke hearts, onion, carrots and sweet potato. Cook for 2-3 minutes. Add broth, lemon juice and lemon slices to pan. Place in oven and cook for 10 minutes. Add kale and cook for an additional 10 minutes.
I know kale is one of those love it or hate it foods but, trust me, it is delicious here. If you are an absolute kale hater, feel free to swap it out for spinach. Spinach does wilt faster though so you won’t need to cook it as long.

We love kale at our house!!! And we cannot keep up with the amount of kale growing in our garden so I’m always looking for new ways to use it. This looks amazing, I’ll have to grab some artichoke hearts so I can make this for dinner this week 🙂
