College football season has started and that means lots of game watching and tailgating has started at our house. We started with the opening game of our favorite team and plan to host homegating parties almost every weekend we have a game! Of course, no game day is complete without delicious snacks to eat in between plays. We love having people over to watch the games and seeing what everyone brings to share. And, of course, I like to make sure there are items on our food table that are one of a kind and never seen before! One of my recent favorites were the BBQ chicken bacon skewers we served.
My game day preparations start with shopping at Kroger where I get all the ingredients I need including Dr Pepper®.
These chicken skewers are simple to make and are basted with an amazing Dr Pepper® based BBQ sauce which doubles as a fantastic dipping sauce. The sauce adds the perfect amount of spice and blends so perfectly with the bacon and chicken. I also like making it because then I know we’ll also have everyone’s favorite drink, Dr Pepper®, in the refrigerator too. Throw these on the grill or cook them in the oven…either way, you will watch them disappear from the plate the moment you put them out.
Ingredients for BBQ Bacon Chicken Skewers:
1 lb chicken breast tenderloins
1 cup Cheez-It® crackers, crushed
1 package bacon
Dr Pepper® BBQ Sauce:
1/2 Tbsp garlic powder
1/2 Tbsp onion powder
12 oz Dr Pepper®
1/2 cup apple cider vinegar
1/3 cup Worcestershire sauce
1/2 cup brown sugar
2 tsp chipotle chili powder
1 tsp salt
Let’s Make It:
1) In a saucepan, combine all ingredients for BBQ sauce. Bring to boil over medium heat and then reduce to low heat. Simmer for 20 to 30 minutes or until thickened. Remove from heat and let cool.
2) Preheat oven to 400 degrees. Line a baking sheet with foil
3) Thread chicken onto skewers. Roll in crushed Cheez-It® crackers and then wrap one bacon slice around each chicken skewer. Brush on BBQ sauce. Place in oven and cook for 10 minutes. Flip over and baste with BBQ sauce again. Cook for an additional 10 minutes or until chicken is done. Baste with BBQ sauce and let cool slightly before serving.
These chicken skewers were a total hit. They are the perfect tailgating food because you can eat them right off of the skewer. You can totally put them together ahead of time and just cook them at your tailgate or right before your homegating party starts.

- If using bamboo skewers, be sure to soak them in water for 20-30 minutes before using.
