This post is coming to you way late but hey, I’m still on Chicago time 😉 We had an awesome weekend in Chicago for BlogHer Food. I got to meet some fabulous other bloggers and spend time with my good friend, Allyson too! I ate my way through the city which of course prompts to me to turn back to my Paleo Monday routine because I need it more than ever. I certainly can’t complain though about all the amazing donuts, pizza, tapas, pasta and sushi because it was delicious. I mean…look at it!
That was my pasta dish from Eataly. It is simply amazing what a few simple but high quality ingredients can make! I tried to sneak a Parmesan wheel home with me but it was too heavy 😉
Let’s talk about today’s recipe though. Paleo Asian beef is an awesome Asian inspired dish that comes together super fast and tastes delicious. Basically, everything you want when you are cooking during the week!
One of the things I love the most about stir fry recipes is that you can totally change up what you add in. Mathlete doesn’t love onions {crazy, I know} so I will reduce the number of onions sometimes and maybe toss in broccoli or asparagus.
Paleo Asian Beef Ingredients:
1 lb beef stew meat
Salt and Pepper
1 bell pepper
1 onion
2 garlic cloves, minced
1 tsp fresh ginger, grated
2 Tbsp Ghee
1/3 coconut aminos
2 Tbsp raw honey
1/8 tsp crushed red pepper
2 tsp lime juice
Cauliflower rice
Let’s Make It:
1) Season beef with salt and pepper. Heat 1 Tbsp ghee over medium-high heat in a large pan. Add beef and cook for 2-3 minutes. Turn over and cook for an additional 1-2 minutes. Remove from pan and set aside.
2) Reduce heat to medium and add remaining 1 Tbsp ghee to pan. Add bell pepper and onion. Cook, stirring frequently, for 3-5 minutes or until vegetables begin to soften. Add garlic and ginger and cook for an additional minute. Stir in coconut aminos, honey and crushed red pepper.
3) Add beef back to pan. Cook for 5 minutes or until sauce is slightly thickened. Remove from heat and stir in lime juice. Serve over cauliflower rice.
This is definitely one of my favorite quick and easy meals to make. I love the little bit of heat from the crushed red pepper. You can definitely increase or decrease that based on how spicy you like your food.
