Do you love snack bars? We’re huge fans and like to have a variety of different types around the house. Recently, though, I started making my own because it allowed me to control the ingredients that went into them and really customize them to what my family likes. These gluten free no bake granola bars are my most recent attempt and they are my favorite ones to date.
These granola bars are a combination of delicious gluten free Honey Bunches of Oats chocolate, dried cranberries, and peanut butter. Honey Bunches of Oats Chocolate delivers the perfect combination of crispy flakes, crunchy bunches and now, the yumminess of REAL cocoa. The cereal makes a perfect breakfast but I like using it in these granola bars so I can have a snack on the go that satisfies my cravings for something sweet. And since Honey Bunches of Oats chocolate is gluten free, it offers the perfect option for people who are avoiding gluten in their diet.
Gluten Free No Bake Granola Bars:
3 1/2 cups Gluten Free Honey Bunches of Oats Chocolate
1 cup gluten free oats
1/2 cup sliced almonds
1/2 cup unsweetened coconut
1/2 cup dried cranberries
2/3 cup honey
1/2 cup brown sugar
1/2 tsp salt
3/4 cup almond butter
1 tsp vanilla extract
Let’s Make It:
1. Line a 9×9 square baking pan with parchment paper. Lightly spray with nonstick cooking spray. Set aside.
2. In a large bowl, combine Honey Bunches of Oats cereal, oats, almonds, coconut and cranberries. Stir to combine.
3. Combine honey, brown sugar and salt in a medium saucepan over medium low heat. Bring to a boil, stirring frequently. Boil for one minute. Remove from heat and stir in almond butter and vanilla extract.
4. Combine almond butter mixture with cereal mixture. Stir well to coat. Spread into prepared baking pan and let cool completely. Cut into bars.
My kids like to help out and they prefer to roll the mixture into little balls. The smaller bites are easier for their little hands but have all the same great flavor. The love the little bit of chocolate from Honey Bunches of Oats cereal.

These look and sound really good! No bake is great! We always have the regular Honey Bunches of Oats on hand, but I didn’t realize they made a chocolate flavor. I’ll be looking for them!
