I was looking through my calendar the other day {scheduling Girl Scout cookie booths} and couldn’t believe how close we are to March! Of course, with March, comes St. Patrick’s Day and all the green beer, Guinness {cupcakes} and Irish food your heart could desire. One of our favorite meals to enjoy for St. Patrick’s Day is one pot Irish stew.
This stew is so easy and is the perfect way to add a little Irish flair to your March even if you aren’t planning on celebrating St. Patrick’s Day. We serve ours with Irish colcannon and it is so good.
One Pot Irish Stew Ingredients:
2 lbs potatoes, peeled and cut into ½ inch pieces
4-5 carrots, peeled, cut into 1/2-inch pieces
1 cup onion, roughly chopped
2 Tbsp ghee or butter
2 lbs stew beef, cut into 1-inch pieces
3 garlic cloves, minced
1 1/2 cups beef broth
1 cup red wine
1 bottle Guinness
2 Tbsp tomato paste
1 Tbsp Worcestershire sauce
1 tsp dried thyme
1 tsp dried rosemary
2 bay leaves
salt and pepper, to taste
Let’s Make It:
1. Preheat oven to 275 degrees.
2. Pat the stew beef pieces dry with a paper towel. Season with salt and pepper.
3. In a large, oven safe pot with a lid, heat ghee or butter over medium heat. Working in batches if necessary so that the pan doesn’t get overcrowded, brown the beef pieces. Add garlic and cook for one minute.
4. Stir in ½ cup of beef broth, scraping the pan to remove bits from the bottom. Bring to a simmer and add thyme, rosemary and bay leaves. Stir in tomato paste and Worcestershire sauce.
5. Add vegetables, remaining beef broth, red wine and Guinness to the pot. Cover and transfer to preheated oven. Cook in oven for 2 hours.
You could easily make this in the slow cooker versus in the oven. Just put it on low for 4-6 hours. I do that if I won’t be home to let it cook in the oven for a few hours. Even if your family isn’t big into Irish food, I guarantee they are going to love this!
