Winter temperatures call for warm and cozy meals. I’ve got 29 delicious soup recipes perfect to get you through the blustery days and nights.
There’s a reason winter is typically referred to as soup season. With cold temperatures, frequent rain or snow, and just overall bitter weather conditions in many places, people seek out comfort recipes like soups and stews. Read on to find 29 of the best soup recipes that I’ll be cooking all throughout soup season.
I’m also sharing of my best tips for making soups so you’ll be prepared when you jump into this collection of recipes that includes delicious options like lemon chicken and rice soup and creamy roasted cauliflower soup.
Helpful Tips for Making the Best Soup (may contain affiliate links):
- Season your soup to taste. Many recipes will provide a recommendation on how much salt and pepper to use but you’ll probably need to make some customization along the way based on your taste buds. Raw vegetables tend to need lots of seasoning as they cook (layer those flavors) and the seasoning in store bought broths can very widely. Taste as you go and don’t be afraid to add more (or less) salt and pepper than recommended in the recipe.
- Use a sturdy pot with plenty of room. Consider investing in a sturdy pot with a heavy bottom if you don’t already have one. It will transfer heat evenly which also helps prevent scorching (a definite way to ruin a good soup). I love my Le Creuset Dutch Oven but this budget friendly option from Lodge also has fantastic reviews!
- Watch your cooking temperature. Most soup recipes do best when they are simmered instead of cooked at a rolling boil. You want a small bubble or two to rise to the surface while cooking so keep an eye on your cooking temperature.
- Stagger your ingredients. All vegetables and other additions to a great soup rarely cook in the same amount of time. Be sure to stagger the addition of items based on how long they’ll take to cook and how much cooking time they can withstand. Winter squashes and starchier potatoes can cook a lot longer than something more delicate like spinach.
- Plan for leftovers. Most soups generally taste even better than the next day so plan to have some for lunch or even use these soups as part of your meal planning. Many soups are also freezer friendly too!
