School started today. I’m pretty sure all the moms in my neighbor let out a sigh of relief mixed with a twinge of stress. Sure, we get back on a regular schedule now but that schedule gets infinitely busier thanks to homework, after school activities and all the other stuff that comes along with school starting for the year. It makes the regular stuff like cooking dinner just a little bit more difficult. Thankfully, we can all embrace one pot meals like this paleo one pan Italian chicken to make dinner go a little smoother.
This recipe has become one of my absolutely favorites! Mathlete and the kids get it with a side of pasta and I just have spaghetti squash or sauteed fresh vegetables with mine.
One Pan Italian Chicken Ingredients:
4 6-oz boneless, skinless chicken breasts
1/2 tsp garlic powder
1/8 tsp cayenne pepper
1/2 tsp salt
1/2 tsp nutmeg
1 1/2 Tbsp Italian seasoning
1/4 tsp crushed red pepper
1 Tbsp oil
1 onion, diced
1 clove garlic, diced
1 can fire roasted tomatoes
Let’s Make It:
1) In a small bowl, combine garlic powder, cayenne pepper, salt and nutmeg. Stir to combine. Sprinkle on both sides of chicken breast.
2) Heat 1/2 Tbsp oil in pan over medium high heat. Add chicken and cook until browned; about 2-3 minutes on each side. Transfer to plate.
3) Add remaining 1/2 Tbsp oil. Add onion and saute for 5 minutes. Add garlic and cook for an additional minute. Stir in Italian seasoning and crushed red pepper. Cook for 2 minutes. Add tomatoes and 1/4 cup water. Return chicken to pan and bring to a boil. Reduce heat to simmer and simmer for 15 minutes or until chicken is cooked through.
The other great thing about this recipe is that it is done in under 30 minutes and 15 of those or totally hands off! That is the perfect amount of time to pack school lunches for the next day or even just get caught up on the news. Oh, and with only one pan to clean, you’ll save on dishwasher loading time too. Win-win!
