During the summer, we spend a ton of time outside on our deck enjoying the weather. Firing up the grill and creating peppercorn BBQ burgers is one of my favorite ways to enjoy a gorgeous summer evening. We eat our burgers with a side of redskin potato salad and an ice cold drink for a perfect summer meal.
Our local Giant Eagle store is our grilling headquarters! They have everything we need for our grilling adventures. From propane to produce and their delicious Market District Gourmet Seasoned Beef Burgers, I know I can get everything I need to make a delicious meal on the grill.
Once our shopping is done, we head home to make our delicious meal. I start with the redskin potato salad so it can cool while I cook the peppercorn BBQ burgers. I usually pick up a pre-made dessert from the store while we are there so I have one less thing to make. Giant Eagle always has a great selection.
Red Skin Potato Salad
1 lb red skin potatoes, quartered
2 tsp olive oil
Salt and pepper
2 stalks celery, finely chopped
1/2 onion, finely chopped
2 tsp Dijon mustard
1 cup mayonnaise
Let’s Make It:
Preheat oven to 400 degrees. Toss potatoes in olive oil and season with salt and pepper. Transfer to rimmed baking sheet. Roast in preheated oven for 15 minutes. Remove from oven and let cool.
In a large bowl, combine celery, onion, mustard and mayonnaise. Stir well. Add potatoes and stir to combine. Refrigerate until ready to eat.
I love this potato salad with the peppercorn BBQ burgers. They go perfectly together.
Peppercorn BBQ Burger Ingredients:
4 Market District Gourmet Seasoned Beef Burgers, peppercorn
Fresh cracked black pepper
1/2 cup Heinz BBQ Sauce
8 medium sized onion rings, cooked according to package directions
4 hamburger buns
4 slices KRAFT Natural Cheese Slices
Let’s Make It:
Heat grill to medium. Season burgers with fresh cracked pepper. Add burgers to grill and cook until they reach desired degree of doneness.
Place cooked burger on bun. Top with cheese, two onion rings and 2 Tbsp BBQ sauce.
These burgers are down right amazing. They are perfect spicy and the crunch of the onion rings just adds a little something extra. Mathlete requests I make these almost every time we grill.
