Summer is my kid’s favorite time of year. I mean what isn’t to love: warm weather, no school and lots of cool, creamy treats. After we discovered the fun that is making no churn ice cream, we’ve been trying all kinds of flavors. When Emily asked me to join her Summer Fun blog tour, I jumped at the chance. Our current favorite summer treat: no churn peanut butter chocolate ice cream.
No churn ice cream is awesome because it doesn’t require any special equipment outside of anything you most likely already have at home. I use a mixer but, if you don’t have one, you can always use a blender.
Ingredients for No Churn Peanut Butter Chocolate Ice Cream:
2 cups cold heavy cream
14 oz sweetened condensed milk
1/4 cup cocoa powder
1/4 Tbsp dark cocoa powder
1/4 cup creamy peanut butter
4-5 Reese’s peanut butter cups, roughly chopped
Let’s Make It:
In a large stand mixer, beat heavy cream until soft peaks form. Slowly add in sweetened condensed milk.
Fold in cocoa powder and peanut butter cups. Pour into a loaf pan. Drop peanut butter into ice cream mixture and swirl. Cover and freezer for 5 to 6 hours.
We switch between cones and bowls but we always enjoy eating a scoop of this delicious ice cream during the summer months!

My, oh, my – does this ever look delish! Peanut butter cups are my hub’s fave, so I’m definitely going to give this a whirl.
