For about as long as I can remember, I have hated beets. The world fell in love with beet salads and I kept my stance that I do not eat beets. Then, during our visit to California, one of the courses of our prix fixe menu was a beet and goat cheese dish. I fell in love instantly and started seeking out all things beets. Once home, I created a roasted beet and blue cheese tart that gets made at least a few times a month.
I used Simply Artisan Reserve™ Simple Seasons™ for my tart. It finely crumbled cheese which is perfect for shaking on top of dishes or spooning in larger quantities too. Ingredients for Roasted Beet and Blue Cheese Tart:
1 package puff pastry, thawed
2-3 beets
1/2 cup olive oil
1 Tbsp Italian Seasoning
Salt and Pepper
1 jar Litehouse Simply Artisan Blue Cheese Simple Seasons
1 Tbsp honey
2 Tbsp fresh basil, chopped
Let’s Make It:
1. Preheat oven to 425 degrees.
2. Wash and trim tops off of beets. Wrap in foil and place in preheated oven. Cook for 1 hour or until softened. Unwrap and peel off skins. Slice into thin slices.
3. Unfold puff pastry piece onto rimmed baking sheet lined with parchment paper. In a small bowl, whisk together olive oil and Italian seasoning. Brush onto puff pastry dough.
4. Sprinkle a light layer of Blue Cheese Simple Seasons on top of oil. Top with sliced beets. Season with salt and pepper. Then, spoon additional Blue Cheese Simple Seasons on top of beets. Bake at 425 degrees for 25 minutes.
5. Remove tart from oven and drizzle with honey and top with chopped basil. Enjoy while warm.

I know exactly what you mean, I never really liked beets when I was young I think mainly as my mum didn’t so I didn’t really have them or if I did, they were over-vinegared. But as an adult I’ve grown to love them and now have them often. Sounds like a tasty tart – I made a pizza with a similar combination (plus bacon and arugula) so have a good sense. That looks so good! I used to feel the same way about beets – but then I joined a CSA and had to figure out how to make them edible. I eventually landed on raw beets on salads as being not too bad and have since branched out. What a great combination – these would make such an awesome holiday appetizer!
