Roasted Strawberry Baked Brie
This baked brie is perfect for entertaining, and is great served with an assortment of crackers for scooping up the delicious cheese.
Ingredients
- 1 pound fresh strawberries, halved
- 2 teaspoons olive oil
- 1 teaspoons honey
- 1/4 teaspoon balsamic vinegar
- 8 ounce wheel of brie
- 2 tablespoons roughly chopped pistachios
- 1 teaspoon fresh thyme leaves
Instructions
- Preheat the oven to 350 degrees Fahrenheit or 180 degrees Celsius.
- Combine the halved strawberries, olive oil, honey and balsamic vinegar in a 9 x 13 inch baking dish. Place the baking dish in the preheated oven and bake for 10-15 minutes, or until the strawberries have softened, but still retain their shape. Set aside to cool slightly.
- While the strawberries cool, place a crumbled piece of parchment paper in the bottom of an ovenproof ceramic dish. Place the brie in the dish and bake for 10 minutes, or until soft, but not collapsed. Remove from the oven.
- Spoon the roasted strawberries over the baked brie. Top with the chopped pistachios and fresh thyme leaves. Serve warm.
