Ok, lovelies, help me out. I want to know what is on YOUR menu this week. Sure, I’m still sharing some great ideas down below but I’d love to hear what you have cookin!
Sunday: Sundays are just the perfect days to have slow roasted meats, like this herb roasted pork loin, for dinner.
Monday: Salads are always great during the summer because they give a meal a lighter feel. I am loving the idea of a chicken rice salad.
Tuesday: Burgers are one those foods that you just have to eat during the warm months. I love idea of making a Szechuan burger to change up the flavors.
Wednesday: Poor Mathlete didn’t really get a real Father’s Day dinner because we were so busy. I think I’ll make him some chicken parmesan {his fave!} to make up for it.
Thursday: Kebabs are a great way to cook on weeknights because they don’t take very long thanks to smaller pieces of meat. Beef kebabs with rosemary chimichurri is full of flavor and beautiful colors too.
Friday: Pasta casseroles are awesome meal options. I tend to make one and split it into two dishes: one to eat and one to freeze. Penne a la vodka casserole will be perfect for that option and we’ll get to experience this delicious dish two times.
Saturday: Remember what I said about salads? Well, how does a chipotle chicken Caesar salad sound to round our week? One word comes to mind: yummy.
