Whoa…where did that brisk fall weather come from? I blinked and we went from early October to November! I can’t believe we are so close to the holidays already. I’m keeping warm with bowls of delicious paleo chicken sausage stew. It is the perfect thing to have on a brisk, fall day.

You know the saying “when it rains, it pours?” Yeah, that has been the past week around here. It was one thing after another derailing our plans. Typically, that would cause me to race to the phone for take out. But, since I’ve been using our easy recipes meal plan, I had it all under control and we skipped the drive thru and our usual take out places. These weeks are flying by way too quickly. I feel like I see our grocery guy as much as I see my husband! I really don’t know where the time is going. I’m sure it is just because we are super busy that it seems to go by so quickly. Busy weeks are definitely when our easy dinner recipes meal plan is a major savior for me. I just buy my stuff and cook my way through the week. Easy peasy.

We are back to Paleo Monday today and I have the perfect game day appetizer or even topping for a salad for lunch of dinner. Paleo chicken spinach meatballs make great tailgating food because you can just pop them in your mouth; no utensils needed. I love them on top of my salads or spaghetti squash as part of a meal too. The best part is how easy they are to make!

School started this week and I think I instantly got a few more gray hairs. It has been insane trying to keep up with all of the changes in our routine and making sure everyone gets where they need to be. Of course, I want them FED and where they need to be so dinner is pretty important. It is weeks like this that remind me exactly why I still create meal plans and, especially ones that are full of easy dinner recipes. Knowing what I am going to make for dinner and having all the ingredients on hand thanks to a little bit of pre-planning makes a HUGE difference when dinnertime rolls around each night.

We’re headed into the home stretch of summer here and it seems like the days are getting hotter and hotter versus showing signs of cooling down. I’m still trying to focus on getting in plenty of water each and especially on the days when I spend a lot of time outside or get dragged to boot camp by my neighbor. One of my newest favorites (besides cucumber lemon thyme) is pineapple ginger infused water.
