Hello all! I’m Jess from Plucky’s Second Thought! At Plucky’s Second Thought I try to post really easy crafts and recipes that anyone could complete and accomplish. Yep, you don’t have to be Martha Stewart or Rachael Ray to attempt anything on my blog! I was asked to Guest Blog on Shannah’s Blog to help her out, and I couldn’t say no because I was really excited to share my Homemade Sloppy Joe recipe! 🙂
What’s the best thing about this recipe? You know everything that is going into this dish! There are NO hidden ingredients/chemicals that you tend to find in store bought Sloppy Joe sauces!

Ingredients:
• olive oil
• 1 yellow onion, diced
• 1 green bell pepper, diced
• 1 and 1/4 lbs ground beef
• 1 and 1/3 c ketchup
• 2 tbsp white vinegar
• 1 heaping tbsp brown sugar
• 1 tsp chile powder
• 1 tsp paprika
• 1 tsp salt
• 1/4 tsp black pepper
• 2/3 c water
• hamburger bun
Directions:
• In a large skillet sauté onion and pepper in olive oil over medium-low heat.
• Once tender, remove from skillet.
• Then brown beef over medium heat; drain grease.
• Add sautéed vegetables back in pan along with ketchup, vinegar, brown sugar, spices, salt, pepper, and water.
• Bring to a simmer and cook about 20 minutes or until water is absorbed, stirring often.
• Serve on hamburger buns.

Organizing the Odds and Ends with Trinity Home Storage
One of my New Year’s resolutions was to get our house more organized and clean up some of the odds and ends that resulted from us finishing our basement. I have spent most of January organizing different areas of our house including my craft room and our toy storage areas. We had a few places that still needed some attention though.
The first was our DVDs and video games. We had moved them into the basement from our family room but their old DVD holder didn’t fit into the space we had for them. So, they just lived on the floor for awhile.
When I was offered the chance to work with Trinity, makers of some awesome home storage products, I obviously jumped at the opportunity because it would help me with organizing some of my odds and ends and actually achieve success with one of my resolutions.

Inspiration to Create my Own #MomCave
We spent most of last year working on finishing our basement. Mathlete refers to it as his “man cave” since it is equipped with all the stuff most men love: leather recliners, a huge theater screen, a second tv and kick butt surround sound.
Now that his space is complete, I’m looking to create my own space; my #momcave.
We have a sitting room in our master bedroom that is currently unused {well, unless you count storing random stuff as being “used”}.
I think the space is perfect for my mom cave. With all the windows, it gives me a ton of light which is great since I don’t need the darkness for a better tv view.
I recently did a little online and in-person shopping to try and get inspired for decorating this space. I had seen a lot of commercials for La-Z-Boy furniture galleries and so I clicked over to check their website. The online catalog is full of awesome ideas for creating beautiful rooms.

Can you believe January is almost over? I am shocked at how fast the month has flown by. I guess it is all the fun I have been having 🙂
I’m excited to share some new recipes with you as part of What to Cook Wednesday!
Sunday: Lasagna is one of those dishes that is so versatile. Rosemary chicken lasagna is such a great new twist on a classic dish.
Monday: I love pasta. It is a total weakness of mine. Avocado alfredo pasta with spicy shrimp definitely sounds like a perfect way to get my pasta fix.
Tuesday: On weeknights, sometimes sandwiches and wraps are the easiest way to get dinner on the table. Cashew chicken salad wraps are a great way to have a tasty meal quickly.
