I have a black thumb. I pretty much kill just about plant that I work with in our yard. The sole survivor in our house is a Christmas cactus that was a gift from Junior and Stud Muffin when my grandfather died.

I have pinned so many versions of the painted wooden utensils so I finally decided to actually make some.

So, I know I haven’t been doing a lot of my regular posting this week (No WTCW…GASP!) but I wanted to come and post today about some of the amazing projects you guys shared last week. After all, I wouldn’t be celebrating a blogiversary without you here reading my blog!

We aren’t doing our normal WTCW today…don’t worry though, it will be back at its regularly scheduled time next week after the blogiversary celebration is all done.
I couldn’t go an entire week without sharing some recipes with you though. This week, I’m focusing on meal plans for weight loss since that is very high on my priority list right now.
Let’s take a look at some of the awesome ideas out there for low calorie and health conscious recipes.
Skinny Taste is my go-to source for healthy meals that I know will also help me focus on my weight loss goals. She specializes in recipes that are full of flavor but won’t break the calorie “bank”.
How does recipes like pulled pork bbq sandwiches, Asian cabbage mango slaw, bangin good shrimp and Asian edamame fried rice sound?
Another great source for healthy meals for me is Kalyn’s Kitchen. She focuses a lot on the South Beach and Atkins diet but her recipes can easily be used for any healthy eating plan.
This is one of my absolute favorite recipes from her site. It is so filling but very healthy and light on the calories and fat.
She also features some amazing desserts that are pretty easy on the waistline too. I am such a sweets junkie that having options for dessert is so important when planning my meals.
Mini pumpkin cheesecakes are low sugar but oh so delicious. I am even able to skip the whipped cream and save some more calories.
So, how do you plan in healthy meals to help with your weight loss (or even weight maintenance) goals? Do you have a favorite website or cook book that you use? I’d love to hear any additional ideas you all have for meal plans for weight loss.

I know I haven’t posted awhile on what is happening in the basement {the last update was here}. Mathlete has been doing a bunch of work down there though.

Let’s back up a little though. The last time you saw it, that space looked more like this
After talking to the plumber, we decided that it would be best to move some of the existing roughed in plumbing around.
In this picture, I am essentially standing where the toilet will eventually go and straight ahead will be the tub. Speaking of tubs, here is ours!
Opposite from the tub will be a vanity and toilet.
There are two doors…one in from the hallway and one into the bedroom.
Now, we have to schedule the plumber to come in a do a little more work in there. Lots of progress.

Our weather has been gorgeous recently. Warm days with really nice evenings. It has been perfect for grilling, eating outdoors and nice, cool cocktails!
You know I’ve gone on and on about my love of Tex Mex food so it should be no surprise that I’m a HUGE fan of margaritas. My neighbor actually makes a ‘beergarita’ but I have never been able find anything really like it out in a restaurant. That is…until now!
A friend was talking about a lunch she had with her family over the weekend and the new CoronaRita at Chili’s. She had gone for some delicious chips and salsa and decided to add the drink to her meal at the last minute. She said it was so delicious. Of course, I was intrigued. Could Chili’s really have made the ‘beergarita’ available out in a restaurant? It would make sense that they would be the ones to try and perfect such a thing! I mean I can only imagine how delicious a CoronaRita would be with their crispy chicken tacos or, my personal favorite, the fajitas!
It certainly looks delicious right?!
For Cinco de Mayo, we usually try to pick a restaurant to go and celebrate. It is always a great time to hang out and catch up over dinner. This year, I think it will be fun to gather some friends up (it falls on a Saturday afterall!) and head over to Chili’s. I know we’ll be able to find something on the menu to please everyone since not all of our friends are die hard Tex Mex fans like us. Plus, we’ll get the added bonus of getting to try a new cocktail.
