Remember how just yesterday it was July? Yeah…me too! I feel like August is absolutely flying by! Of course, having two birthdays back to back in our house doesn’t make time slow down at all. Double birthdays means the beginning of my August is always filled with invitations, R.S.V.P.s, party decorations and of course…food. You can’t have a party without delicious food! Even though the parties are for the kids, adults get the kids there/stay for the party and so should be rewarded with a bit of grown up food too! That’s where caramelized onion dip with bacon comes in…a combination of Philadelphia cream cheese, caramelized onions and bacon makes it the ultimate parent reward for enduring a 2+ hour birthday party.
Planning two parties back to back {like within 12 hours of each other} creates a ton of challenges. From Friday morning until Sunday afternoon, sleep and I are not acquainted 🙂 Another challenge is keeping those parties within a reasonable budget. That is where smart shopping and coupons come in! When I was prepping to make this dip, I printed off a coupon for the cream cheese I needed before heading to Walmart so I could #SaveonPhilly!
Once I had my supplies, I was ready to go…
What You’ll Need:
2 Tbsp unsalted butter
1-2 large Vidalia onions, halved and sliced
1/4 tsp salt
1/4 tsp pepper
1 tsp sugar
1 cup Greek Yogurt
1/4 cup fat free sour cream
8 oz Philadelphia cream cheese, softened
1 tsp worcestershire sauce
3 slices of bacon, crumbled
Let’s Make It:
1) In a large pan, melt butter over medium heat. Add onions, salt and pepper. Cook, stirring occasionally, until onions begin to soften {about 5 minutes}.
2) Stir in the sugar, scraping the brown bits off the bottom of the pan. Cook, stirring occasionally, for an additional 15-20 minutes until the onions are golden brown. Transfer to cutting board and coarsely chop.
3) In a large bowl, combine the Greek yogurt, sour cream and Philadelphia cream cheese. Mix well. Stir in worcestershire sauce, 2 slices of crumbled bacon and onions. Mix well. Top with remaining slice of crumbled bacon. Refrigerate until about 20 minutes prior to serving.
This dip is a huge favorite and will seriously disappear off the plate. Of course, it would have been helpful for me to actually remember to put this dip out at the party but, forgetting just left more for me to eat. I guess that is my reward for making it through both parties 😉
