I am a huge salad fan! From kale salads to southwestern style salads, I love them all and take them for lunch a lot. I also use them as great first courses or extras when we are having people over for dinner. One of my favorite things to include on our menu is a wild greens salad with beets and fried goat cheese.
Of course, when I am busy prepping for people to come over, I don’t have a lot of extra time to chop up vegetables for my salad. That is one reason that I love the Eat Smart salad kits. The kits are chef-inspired and offer sophisticated blends of six or more superfoods like kale, red chard and broccoli. Plus, they come with everything you need to put together an amazing salad including toppings like cooked beets and golden raisins. The Beets and Greens salad includes a delicious white wine vinaigrette dressing that is perfectly light.
Fried goat cheese is the perfect topping for the beet salad. The creaminess is an amazing compliment to the crisp greens of the salad. It seems a little intimidating to make but it is really so easy! I made it into slices for my salad but, when I am adding to salad for a group, I roll it into small balls instead.
Fried Goat Cheese Ingredients:
1/2 cup panko crumbs
1/2 cup Italian seasoned bread crumbs
6 oz goat cheese log
2 eggs
1/4 cup flour
3-4 Tbsp oil
Let’s Make It:
1) Place your goat cheese in the freezer for 10-15 minutes. Line a baking sheet with parchment paper.
2) In a shallow dish, combine the panko crumbs and bread crumbs. Stir to combine. Place flour in a separate shallow dish. Finally, whisk together eggs in a third shallow dish.
3) Slice goat cheese into 1/4″ slices. {I typically wipe my knife with a warm cloth in between cuts.} Lightly coat each slice with flour. Then, dip into egg. Add to bowl with bread crumbs and turn over to coat. Place on parchment paper. Repeat until all the slices are breaded.
4) In a medium pan, heat oil over medium heat. Add goat cheese slices, 1-2 at a time depending on your pan size, and cook 1-2 minutes on each side or until lightly browned. Transfer to plate and repeat until all slices are cooked.
I have always ordered fried goat cheese for my salads whenever it is on the menu but now, I make it at home whenever I want it. It really is so easy! You can easily tailor this recipe to how much you want to make as well.
