Picture this: It is 3pm on a Thursday afternoon and you check your email only to see that your kid’s summer camp is doing a dessert buffet {or bake sale} the next day. You signed up to make something but it totally fell off your radar.
Panic sets in because you don’t want to be that mom who brings the store bought stuff
{Disclosure: I’ve totally been that mom a few times but I try not to always be that mom!}.
Enter a super easy recipe for chocolate chip butterscotch oatmeal bars:
What You’ll Need:
1 16.5oz tube of chocolate chip cookie dough
1 cup quick oats
1/2 cup semi-sweet chocolate chips
1/2 cup butterscotch chips
2/3 cup salted caramel sauce (you can use caramel ice cream topping in a pinch)
4 1/2 Tbsp flour
1 tsp vanilla
Let’s Make It:
1) Preheat oven to 350 degrees.
2) In a large bowl, mix the cookie dough and quick oats together. {You’ll need your hands for this so go ahead and dig in…or better yet, get the kids involved!}.
Reserve 1/2 cup of the dough mixture and press the remaining dough into the bottom of a 9-inch square baking dish. Bake in the oven for 10 to 12 minutes or until set.
3) In a small bowl, mix the chocolate chip and the butterscotch chips together. Pour over top of cooked cookie dough “crust”.
4) Mix caramel sauce, flour and vanilla together; stirring with a whisk. Drizzle over the chocolate chips.
5) Crumble remaining 1/2 cup of cookie dough on top of the caramel sauce. Bake for an additional 20 to 25 minutes at 350 degrees.
6) Cool before slicing.
Now, your panic becomes total calm because you have a rocking dessert for your event that came together super quickly! Enjoy ๐
