I love Shepherd’s pie. Like seriously love it. My family tolerates it but would rather I not make it quite so much once the weather turns cold. I try to oblige but I really wanted to give a few substitutions to my normal favorite recipe a try. So, I begged the family to forgive me as I whipped up carrot cauliflower shepherd’s pie.
You can consider this recipe a semi-lightened up version of the traditional shepherd’s pie. It swaps ground beef with turkey and potatoes with cauliflower. The result is an amazingly delicious winter meal you can feel good about eating even if you are watching your waistline.
What You’ll Need:
Topping
2 heads of cauliflower, trimmed to florets {~1 lb of florets}
3 medium carrots, sliced
3 Tbsp unsalted butter
1 Tbsp skim milk
3 oz goat cheese
salt
pepper
paprika
Filling
1 1/2 lbs ground turkey
1 tsp oil
1 onion, finely chopped
1/2 cup sliced fresh mushrooms
2 cloves garlic, minced
2 Tbsp wondra flour
1 cup frozen mixed vegetables, thawed
1 cup beef broth
1/2 cup stewed tomatoes, drained and roughly chopped
1 tsp tomato paste
1 tsp worcestershire sauce
2 tsp dried thyme
2 Tbsp red wine vinegar
Let’s Make It:
1) Preheat the oven to 400 degrees. Prepare a 9×13 baking dish by spraying lightly with cooking spray. {You can also do two 8×8 square dishes and plan to freeze one for later.}
2) In a large pan, brown turkey over medium heat and drain. Set aside.
3) Add 1 tsp oil to the pan and saute the onion, mushroom and garlic until softened.
Add wondra and stir well. Cook for 1 minute.
4) Stir in ground turkey and mixed vegetables. Add beef broth, stewed tomatoes, tomato paste, worcestershire sauce and thyme. Bring a boil and reduce heat to a simmer. Simmer for 5-10 minutes. Remove from heat and stir in vinegar.
5) Steam the cauliflower and carrots until very tender. Add to a large bowl along with the 3 Tbsp of butter. Mash until chunky mashed potato like consistency.
Stir in milk and goat cheese. Season to taste with salt and pepper.
6) Spread turkey mixture into prepared pan.
Top with cauliflower mixture. Sprikle the top with paprika.
7) Bake at 400 degrees for 20 minutes or until the top is golden brown. Let stand about 10 minutes before serving.
