Pizza Night and a Stone Fruit Salad

Ok, we’ve all been there. We are running in 10 different directions, with a to do list that is at least 5 pages long, and solo parenting on top of it. Then, one kid comes home with some major school project (due tomorrow), or it is the weekend of the big gymnastics meet/dance recital/soccer tournament. I’ll admit I am living that right now and so we are having pizza night, and I’m earning my “Running on Fumes” Red Baron® Baroness Patch. I am including a stone fruit salad with our pizza night, but that is just because I can’t go soft and give up on my “fruit and vegetables with all dinners” rule.

Our fall season is always super busy with school, sports, family activities and trying to spend a ton of time outdoors before it turns too cold. I adore fall foods like pumpkin, squash, and sweet potatoes. But, while we love all the comfort foods that fall brings, I find it can be difficult sometimes to cook some of those meals in the time we have. Plus, we are trying to eat a little healthier and add in lots of vegetables where possible into our diet. With shrimp vegetable noodle chow mein, I can still get my fall butternut squash fix and reach my healthier meal goal in a quick and easy meal my family loves.

Mathlete’s birthday always falls very close to Labor Day. So, to celebrate a day off from work and his birthday, we usually throw a fun Labor Day barbecue with friends and family. It is the perfect way to close out the summer and get in one last day party before the fall weather starts to set in. Of course, no party is complete without delicious food, especially yummy dips, to enjoy while the main meal cooks. The Most Delicious One Pan Meals

So, we started school here yesterday. Based on my Facebook and Instagram feeds, we are not alone in going back to school in the last week or so. Of course, with back to school comes homework, more activities and just an overall much busier schedule. I find, especially during the first few weeks where we struggle to get out of the summer laid back mindset and into a routine, dinner rarely makes it to the table. This year, I am determined to change that though and this list of the most delicious one pan meals (EVER) is my secret weapon.

Wine Country Chicken Salad

Last year, when we visited California wine country, I fell in love with a chicken salad we found at a local market. I always refer to it as the “wine country chicken salad” whenever I bring it up to Mathlete. While I haven’t found it in any markets close to home, I have started making from scratch at home trying to recreate that vacation. Plus, the chicken salad is perfect for parties and picnics because it is so easy to pack and take along.
