Every Thursday, I treat my daughter to pizza from her favorite place on our way to gymnastics. Wegman’s pizza is a lot like New York style and she just loves it. She also usually asks for some kind of dessert in the form of a donut or cookie. This is how I discovered their peanut butter patties. I grabbed one and threw it on our bag one time to enjoy as my own dessert. Little did I know what I was getting or how delicious it would be! It is an amazing combination of cookie, peanut butter and chocolate. After having that first one, I knew I would have to figure out how to make my own and decided to make peanut butter cookie eggs for Easter.

Sleepover Planning: The Perfect Snack
Six years old are funny. They start to get all kinds of personality and have very specific ways they want things done. A few friends are planning a sleepover for one night of our upcoming spring break from school and I am getting “schooled” on good ideas for snacks. Of course there will be the typical snacks of popcorn, cookies and candy. But, I want to make sure there are a few wholesome snacks too that incorporate fruits or vegetables. So, I did a few taste tests with her and we created what she called “the perfect snack.”

Spring Oreo Truffles
It is official. Spring is here! Well, unless you count the 5 inches of snow we got yesterday. Then, it looks like Spring is farther away than ever. To make myself feel better about this ridiculous weather, I decided to dive into pastel colors head first and make spring Oreo truffles!
Copycat Rigatoni D
Ok, confession time: I love pasta. Really, who doesn’t?! I mean it is so versatile and can be paired with just about everything for an amazing dish.
One of my favorite pasta dishes is from Maggiano’s {our local Italian place does a version that is really close as well} and it is called Rigatoni D. It is full of mushrooms and chicken and just so delicious. We’re trying to eat out a lot less so I decided to try and create a copycat of the recipe so we can enjoy it anytime we want at home. I think my copycat Rigatoni D comes pretty close to the original so I am excited to have it whenever I want now.

Date nights around here have become a little rare. Between our busy schedules, Mathlete’s flight lessons {yes, his newest hobby is learning to fly} and our youngest’s new sleeping arrangements, we find it hard to get out for a night alone. So, I started thinking about ways to have a date night at home without totally losing the fun by making the meal a lot of work. When I had the opportunity to work with Gallo Vineyards, I obviously jumped. Date night is just not the same without a great glass of wine {well, no day is really} so it was the perfect way to enjoy the Gallo Vineyards wine. Once I had my Hearty Burgundy in hand, the plans started to come together starting with my recipe for chicken with red wine sauce and roasted mushrooms.

Prosciutto and Poppy Seed Chicken
I love ham and cheese sliders. Like really, really love them. I think we ate them at least once per week for the entire month of December. Then, I decided that a) I shouldn’t serve sliders so often and b) all that butter probably wasn’t good for my waistline. So, I decided to try and make a dish that had a lot of the same flavors of the sliders but in a meal that didn’t involve mini rolls and practically a stick of butter. The first time I made prosciutto and poppy seed chicken, even my dad ate and liked it. You guys don’t know my dad but for him to like something new is a pretty big deal. Especially if that something has poppy-anything in the name.
