March is here and that means tons {yes, TONS!} of basketball is about to hit your TV. Unlike football though, these games will be on at all times of the day, so you need to be prepared with lots of different food options to enjoy while watching the big games! Now, most of the time, game-day food includes things like wings, burgers and bacon. That is kind of heavy for a 10 a.m. game though. Plus, a lot of women watch basketball and really get into the tournament, so some lighter food is always appreciated. Don’t worry though…Keeping those early games in mind, I created some yummy yogurt parfaits that would be perfect!

Guinness Cupcakes with Irish Cream Frosting
So, I shared all about my first experiences with Irish coffee during a trip with Mathlete way back in 2003 and the resulting cupcake. Today, I’m going to focus on something a little more near and dear to Mathlete’s heart: Guinness cupcakes with Irish Cream frosting…sort of like a car bomb in a cupcake.

Gluten Free Chicken and Kale Salad
I have a good friend {amaze-ball friend, really} who recently had to go gluten free for health reasons. Now, I know that these days there are all kinds of gluten free products out there to help people make the transition but it can still come as a shock to your system. So, in an effort to help and be supportive, I decided that I would start including more gluten free options here on the blog. I find that lunch is typically the most difficult meal for me to make specialized in any way because it usually eaten at the office so I decided to focus on lunch first and made this gluten-free chicken and kale salad topped with a carrot cucumber dressing. Not only is it gluten free but it is super healthy and delicious too.

St. Patrick’s Day Food: Reuben Sliders
Remember me telling you all about how much Mathlete loves a Reuben sandwich and my solution was to make him Reuben Dip? Well, someone wasn’t entirely happy with just having a dip made with the flavors of his favorite sandwich. Of course, the easiest thing to do would be to just make him a Reuben…or even take him somewhere to buy one. Instead, I decided to make Reuben sliders.

Irish Coffee Cupcakes with Whipped Cream Frosting
Irish Coffee Cupcakes with Whipped Cream Frosting are the perfect adult cupcakes recipe to make for your St. Patrick’s Day parties!
On my first ever trip with the Mathlete, we went to San Francisco for a wedding. He had a few friends living there and almost every day we ended up in an Irish bar drinking Irish coffee. Now, I love my lattes so the idea of Irish coffee wasn’t that appealing to me but it turned out to be so delicious.

St. Patrick’s Day Marshmallow Pops
I love all of the bright and cheery green that comes along with St. Patrick’s Day. It is a great primer for Spring! Of course, that extends into food too which is why I am such a fan of these St. Patrick’s Day Marshmallow Pops. They are absolutely one of the easiest things you will ever make but are so cute and delicious. …
Amazing Reuben Dip
A Reuben is one of those sandwiches that has a devoted following. You either love it or hate it. Mathlete is in the love category. If it is on the menu, Mathlete will order it without question. Me…I am in the other camp. I don’t care for it so we never make it at home. I would much rather have a balsamic chicken or kalbi beef sandwich instead!
But, with St. Patrick’s Day approaching, I decided to make some reuben dip for Mathlete to get him all the flavors of the Reuben sandwich without actually making a sandwich 🙂

Chicken Tamale Casserole
I love tamales! When we go to Mexican restaurants, it is usually one of the first things I order if they are available. What I don’t love is the work that goes into making them at home. So, I went searching for an easier way and came up with chicken tamale casserole. It is so easy to make and has all the flavor of a traditional tamale.

Morning Energy from Cereal
This is a Sponsored post written by me on behalf of Honey Bunches of Oats for SocialSpark. All opinions are 100% mine.
It is no secret around here that I get up early and go hard all day long. By bedtime, I am exhausted and really only make it through the day thanks to some major caffeine. Of course, picking good foods to fuel my day is important too and that starts with breakfast.
No one in my family really has time for a sit down breakfast so we tend to turn to cereal or muffins to get our day started. Recently, we had the opportunity to try Honey Bunches of Oats Morning Energy cereal in both Cinnamon Crunch and Chocolatey Almond Crunch.
