Happy Wednesday! Let’s jump right into some meal planning, shall we?

Sunday: Fall is on its way….well, at least according to the calendar. I figure we will bring a few fall flavors into our dinner with butternut squash and sweet potato lasagna.
Monday: I love the idea of this spicy sausage and shrimp panzanella.
Tuesday: All the Tex-mex flavors in this tortilla pie should super delicious and perfect for a weeknight meal.
Wednesday: I don’t usually put my own recipes in here but I have been itching to make this chicken avocado quinoa salad for a little while now.

Thursday: Mathlete isn’t big on salads but I bet, if he sees that there are corn chips involved in this corn chip taco salad, I might be able to get him to eat it!
Friday: Shockingly, I have yet to cook with soda. So, I’m going to give root beer chicken a try this week!
Saturday: Busy Saturday wins over cooking again. Good thing I have recipes like slow cooker French dip sandwiches to help me still get dinner on the table.

Pasta Salad with Prosciutto and Summer Squash
Remember those birthday parties I rambled on about for weeks? Well, one of the biggest challenges is what to serve at a birthday party. Both of my kids are at an age where parents still attend the parties so the aim is to get birthday party food that pleases kids and parents alike.

WTCW #67
We made it halfway through another week which means it is time for What to Cook Wednesday feature.

Sunday: I love pasta. Pasta doesn’t love my hips {or maybe it does since it likes to hang out there}. Thankfully, I stumbled upon ravioli made out of squash!
Monday: Meatless Monday with some Italian flair this week! I saw baked pattypan squash parmesan with garlic breadcrumbs and knew it had to be on my list!
Tuesday: I picked a quick little through together meal featuring herbed Panko chicken.

Wednesday: Mathlete loved to get meatballs in his Pho. It is a little too hot for that though so we are going to give Vietnamese pork meatballs in lettuce cups a try.
Thursday: Pasta night featuring nettle pasta.
Friday: Some weeks Fridays are just so hectic so I turn to my crockpot. I’ve got slow cooker Filipino adobo pulled pork on this week’s list to help reduce my Friday dinner rush stress.
Saturday: The weather is cooling down just a bit making grilling out more comfortable. So, lemongrass beef skewers will be making an appearance on our grill!

WTCW #65
Ok, so my hair is no longer on fire {just a little bit of smoldering} so I can do a more proper What to Cook Wednesday feature for you this week. I will go ahead and warn you that I might not be able to offer as much next week as I will be sending not just one but both of my kids off to school for the first time ever! Kleenex is having a banner month thanks to my tissue investments!
We’re not here to talk about school though so let’s get down to the food.

Sunday: Kindergarten prep will be in full force in our house so I am definitely digging the idea of super comfort food. Chicken with artichokes and wine sauce offers some comfort with a little twist.
Monday: It may still be a little hot outside but the idea of trying African peanut soup just stuck with me from the moment I saw it.
Tuesday: We usually do our grocery pick-up on Tuesdays which makes it the perfect day to try out coconut shrimp since they will be fresh from the store!
Wednesday: Instead of tossing leftovers on trash night, meatloaf grilled cheese sandwiches offers a great option for using them!

Thursday: Pasta night! I love the idea of mixing pasta with tons of fresh, summer veggies in pasta primavera.
Friday: By the end of the work week, I am usually looking for something quick and easy (but super tasty) to throw together for dinner. Baja chicken wraps sound like a great option that will fill all those requirements.
Saturday: There is something so summery about corn and crab cakes. With baked corn and crab cakes, I can instantly get the best of both!

I’m back and begging for forgiveness for this ultra short WTCW post. Last week and the weekend really took it out of me and now I am barreling straight towards the start of the school year. So, I still have some yummies for you but without a lot of exposition to go along with it!
Sunday: Buttermilk Fried Chicken Tacos
Monday: Thai Green Coconut Curry Chicken
Tuesday: Tuna Cobb Salad Sandwiches
Wednesday: Jerk Chicken and Pineapple Pizza
Thursday: Summer Vegetables with Sausage and Potatoes
Friday: Southwest Flank Steak with Peach Salsa
Saturday: Steak and Grilled Zucchini Burrito

The cleanse is over now so I can actually think about eating some of these yummy recipes. Let’s take a look…

Sunday: I’m supposed to start light when going back to solid foods. Swordfish with pineapple salsa sounds refreshing and light!
Monday: This zucchini ribbon pasta with basil cream sauce is chock full of yummy veggies.
Tuesday: I’ll be getting back in from of the grill and making lemongrass shrimp skewers.
Wednesday: As if buffalo chicken breasts weren’t good enough, now we have stuffed buffalo chicken breasts! Yum.

Thursday: Speaking of stuffed, the cheese coming out of these pizza burgers looks delicious.
Friday: Sausage stuffed zucchini is a great combination of fresh veggies and a little meat.
Saturday: We’ll round out the week with a little breakfast for dinner and make bacon corn hash.

WTCW #61
Wednesday…again! We are running out of summer Wednesdays fast, aren’t we? That’s ok, fall and winter food tastes pretty good too.
Let’s take a look at some yummy options for the coming week.

Sunday: Nothing says Sunday dinner to me like meatloaf. Bacon topped mini turkey meatloaves are a great option to go a little lighter on a traditional meal.
Monday: Meatless Monday makes a return and this time I am doing a unique take on the ultimate delivery food: garden hummus pizza.
Tuesday: I am always trying to add new types of cuisine into our diet so this Dak Galbi seemed like a great option to accomplish that goal.
Wednesday: I hadn’t intended for this week to be so veggie centric but it certainly can’t hurt. Triple bean veggie burgers is a lighter option to the traditional grilled beef burger.

Thursday: Pasta night is back! This week we have ravioli with a white wine butter sauce on the menu.
Friday: Veggies, veggies everywhere! I am practically drooling at the sound of a zucchini basil strata for dinner.
Saturday: So, earlier in the week, we upended the idea of a traditional pizza. Now, we’re going to throw a curve ball at the world of quesadillas with a pizza quesadilla.
