It seems like life these days get busier and busier. For most families, including mine, even a 30 minute meal can be challenge on many evenings. I find that it gets even harder to get a delicious dinner on the table and we end up ordering take out or going out to eat. This leads to spending a lot more money and, frequently, wasted food since I’ve actually bought food to make but just didn’t have time to make it. But, I find when I take some time one day a week to do a little meal prep that all changes.Â
My kids love freeze dried fruit. From raspberries to bananas, they eat a ton of it (in addition to fresh fruit, of course). The absolute best place to get it near us is Trader Joe’s so we spend a fair amount of time there buying fruit. Of course, no trip to Trader Joe’s is complete with a jar of cookie butter. We bring two jars home: one for eating with a spoon and the other to make Cookie Butter Cheesecake Bars.
I have been a peanut butter lover since I a was a little child. I get it from my dad who is straight up obsessed with Reese’s Cups and always has been. From peanut butter and jelly sandwiches to any candy that contained peanut butter, I love it all. Of course, I use peanut butter a ton at home too in cooking and baking. So, it is Valentine’s Day.
