Happy Monday! We’re back to our Paleo ways here in the Just Us Four household after having cheated just a bit with some amazing Indian food from our local place that we found out was closing! Yesterday was their last day so we definitely made sure we got some of their food and enjoyed it before it was gone for good. We’re back on track though and you HAVE to try this Paleo Pumpkin Chili.

I’m really excited about today’s Throwback Thursday post. It was one of the first posts where I started making some of my own ingredients and so it was definitely one I wanted to give some further attention to.

I am honored to partner with Bertolli to celebrate their 150 Anniversary and bring you this recipe. While this post was sponsored, all thoughts and opinions are my own. #MyTuscanTable
I didn’t travel much as a kid. My family stuck close to home for vacations {definitely not a complaint…just a fact} and tended to focus more on staycations and spending time with local family members. On the opposite end of that spectrum is my husband who spent his summers traveling all over the country and some international travel too. Even in their retirement, his parents continue to travel the globe. They have inspired me to create a must visit list of travel locations. One of the top places on that list is Tuscany. Until I have the chance to go, I settle for bringing Tuscany to my home through delicious Italian inspired meals like one pot shrimp marinara.

I am excited to partner with Smithfield to “porkify” a classic tailgating recipe. While this post was sponsored, all thoughts and opinions are my own.
Football is a way of life in our house during the fall. I often joke that we have to stop doing any other activities so my husband can be near the TV when his favorite teams are playing. Of course, with every good game comes delicious tailgating food. Football is his arena and the food is where I play my role. I’d much rather be hanging out by the dip than yelling at the referee anyways. I like to take recipes that everyone is used to seeing at a tailgate and changing them up a bit. These BBQ pulled pork potato skins are the result of my plan to “porkify” a tailgate favorite.

Happy Monday! Today I am sharing with you one of my favorite paleo breakfast ideas. Whenever I am really focusing on the paleo diet (or doing a round of Whole30), I always find breakfast a bit difficult because I can really only eat so many eggs.
Plus, my breakfasts are usually on the go so I need something quick and easy. These paleo breakfast meatballs are the perfect solution!

I have a confession: While I try to focus on healthier eating and know I should incorporate more fish into my diet, I have a phobia of cooking fish in the house. You know…all those thoughts of the house smelling like fish for days! Well, I discovered Bumble Bee SuperFresh® and totally changed my mind! All of the varieties are great but I recently used it to make peppered salmon stir fry.

“This is a sponsored conversation written by me on behalf of Dr Pepper®. Game Day Greats brought to you by Kroger. The opinions and text are all mine.”
College football season has started and that means lots of game watching and tailgating has started at our house. We started with the opening game of our favorite team and plan to host homegating parties almost every weekend we have a game! Of course, no game day is complete without delicious snacks to eat in between plays. We love having people over to watch the games and seeing what everyone brings to share. And, of course, I like to make sure there are items on our food table that are one of a kind and never seen before! One of my recent favorites were the BBQ chicken bacon skewers we served.
