September has been an absolute whirlwind around here. School started again along with a ton of after school activities. Add in me trying to go to an exercise class with a neighbor twice a week and you have an all out bonkers schedule. There are at least 3 days in our week where dinner time becomes kind of like pit time at the race track so I need recipes that are fast, easy and delicious. I am so in love with this zesty chicken and rice soup because it is all of those.

Once September hits and the air becomes crisper, I get an instant hankering for soup. I love to enjoy a warm, creamy bowl of soup while curled up on the couch. And just because I’m eating Paleo now doesn’t mean I will forego my creamy soup fix!

We are back to Paleo Monday today and I have the perfect game day appetizer or even topping for a salad for lunch of dinner. Paleo chicken spinach meatballs make great tailgating food because you can just pop them in your mouth; no utensils needed. I love them on top of my salads or spaghetti squash as part of a meal too. The best part is how easy they are to make!

Do you ever feel like you are always falling behind? You see that mom {or dad} who just seems to have it all together and feel just ever so slightly inadequate. As a working mom of two kids, I get that feeling all the time. I live in a place where most moms stay at home and seem to have endless amounts of time to plan playdates, volunteer at school, supply cupcakes for the bake sale and 1,000 other things. Of course, they also manage to have their hair and makeup perfect while doing it. Me, I’m happy to have lunches packed on time and a decent breakfast for the kids. While some moms are making homemade cinnamon rolls and pancakes every morning, we tend to be more cereal eaters in our house because who has the time. I know I probably won’t ever have time to make my kids pancakes on a busy weekday morning but I can make them pumpkin orange crescent rolls that will bake while I struggle with tangles in hair and forgotten paperwork in backpacks.

I might be slightly obsessed with take-out noodles. I am totally that person you see in the movies eating them straight out of the little white boxes straight from the refrigerator. I always get our place to add a little extra spice to mine and not a single noodle goes to waste. Of course, I save it for the weekends when I am not trying to eat most Paleo 😉 In our efforts to make more home cooked meals, I started making spicy pan fried noodles at home.

Copycat Cheese Shop House Dressing

With school getting ready to start, we decided to take the kids for a little mini-vacation last week. We combined visiting my parents, a quick beach trip and a trip to Williamsburg for a little history and waterpark action. While in Williamsburg, we of course talked to the kids about the history and toured Colonial Williamsburg. We also made a stop at the famous {well, famous at least in VA} Cheese Shop for lunch. That stop inspired me to make copycat cheese shop house dressing for everyone to enjoy throughout the school year even when a trip to Williamsburg isn’t practical.

Paleo One Pan Italian Chicken

School started today. I’m pretty sure all the moms in my neighbor let out a sigh of relief mixed with a twinge of stress. Sure, we get back on a regular schedule now but that schedule gets infinitely busier thanks to homework, after school activities and all the other stuff that comes along with school starting for the year. It makes the regular stuff like cooking dinner just a little bit more difficult. Thankfully, we can all embrace one pot meals like this paleo one pan Italian chicken to make dinner go a little smoother.
