I am always grabbing fresh asparagus, kale and spinach when we go on Saturday mornings. Salads are my go to lunches because they are quick, delicious and easy to take to the office with me. Grab some zucchini from the garden or store and turn it into a healthier version of an Italian restaurant favorite. Chicken Parmesan stuffed zucchini is quick and delicious meal that also fits in a few extra vegetables.

Mathlete’s absolute favorite dish from an Italian restaurant is chicken Parmesan. When we were dating, he would offer to make it for me which has become a bit of joke between us since his version is MUCH different than what you get from a restaurant. I’ll just say that it involves a microwave and frozen chicken patties.

With our busy schedule, I rarely have time to make the actual dish so I use it as inspiration for other recipes that I know I can make quickly like my chicken Parmesan muffins or chicken Parmesan burger. Recently, our newest favorite are chicken Parmesan zucchini boats.

We eat a lot of chicken and so I hear from Mathlete “chicken, again?” a lot too. I definitely have to try and make it interesting so that he doesn’t get too tired of my favorite protein. Well, to be honest, my favorite protein is probably bacon but we’ll pretend it is chicken since that is a little healthier. I recently made orange chicken with a white bean saute and it was a huge hit!

Carrot Hummus Toast

Back when I did Whole30, I started eating a version of avocado toast almost every day for breakfast. Bacon replaced the bread and I was in heaven. After Whole30, I would have bread on some days or my regular paleo version on others. Then came the day that my grocery store was completely sold out of ripe avocados and I had to find something else to eat. I was still craving toast and so I decided to make carrot hummus toast to change things up a bit.

Happy Monday! I am recovering from a wonderful Mother’s Day weekend that included a trip to local winery, a visit to my husband’s parents and the best nap ever! We topped off the weekend with some Indian food including butter chicken and vegetable pakora. I’m back on track today with a paleo taco bowl on my lunch menu.
