We love mac & cheese in our house. I don’t get to make it from scratch as often as I like but I try to make a big batch and then freeze it for later use at least once per month. Since we eat it a lot, I like to try and change it up from time to time and go beyond a basic macaroni and cheese. Today starts the arrival of friends for Christmas which means my kitchen will be busy from now until New Year’s Day. I love it because I love cooking and sharing food with my friends and family. Holy almost mid-November already. Where is time going? Have you started thinking about Thanksgiving yet? We like to try and get together for a little pre-Thanksgiving with our friends {a Friendsgiving if you will} so I am definitely heavily focused on Thanksgiving recipes right now. Our meals with friends tend to be the kind where you can grab a few things and eat them on the move between one group of friends to another or while trying to keep all the kids at the table and eating. 20 Minute Mummy Pizza

We used to have bi-weekly pizza nights where we would get together and make homemade pizza with toppings of our choice. Even then, I was always nervous about making the crust so I would buy dough from the store. Of course, that dough requires time to rise and so I always had to make sure I planned ahead. We stay pretty busy right now so that planning ahead part isn’t usually in the cards and we end up with pre-made pizza crust instead. This 20 minutes mummy pizza changed that for good!

We are big Tex-Mex and Mexican food fans. From burritos to quesadillas, we love the flavors of lime, cilantro combined with a hint of spice. One of my favorite things to get when we go places like Chipotle is a rice bowl. I was at home one evening and really craving one so I decided to make my own version. This margarita chicken rice bowl is so easy to make and ridiculously delicious too. You may never go to Chipotle again because you’ve got something even better that you make at home!

A long day at the office can leave me feeling like the last thing I want to do is think about dinner. On those days, I need something that I can throw together fast and that still tastes really good. After all, if I am going to cook, I want something that is still delicious or I’ll be regretting not ordering take out. That is when I turn to items like marinated meats and other convenient foods. Recently, I used the Smithfield marinated pork loin to create a pork and mushroom stroganoff that was absolutely amazing.
