With school starting next week, I am really starting to brainstorm on some easy snack ideas to offer either with the lunches I send or for when they get home from school. Since I work full time, easy snack ideas are a must in our house because I don’t have a lot of extra time to make lunches or snacks. At the beginning of each spring, I buy a basil plant with the hopes that it will give me enough basil to enjoy throughout the summer. Last year, it died 2 weeks in. This year, it is WAY overproducing so I have a TON of basil. When one has a bunch of basil, it is always best to make some basil walnut pesto with it. Then, combine that delicious basil with a few other ingredients to create a truly mouthwatering pesto hearts of palm grilled cheese.

One of my favorite things about summer used to be not having to pack lunches every day for the kids to take to school. As they have grown up some and started doing summer camps more often, we have fallen into a routine of packing lunches even during summer.
