Let’s take a small break from all the food and talk about inspiration a little. Inspiration comes from so many sources. There is the inspiration to create or cook and then there is the inspiration that comes from the positive influence of a loved one. Often, we take the time out to inspire those close to us during the BIG moments in life. But, I think what is most important is finding the time to send love and encouragement even during the everyday challenges life throws us. Maybe invite a friend {or friends} over for a glass of watermelon mint infused water and then use that opportunity to remind them how wonderful they are.

My daughter loves watermelon. I buy one each week and she eats almost all of it by herself. I certainly don’t mind because it so good for her and I will let her eat fresh fruit just about any time she wants. Now that she is back in gymnastics practice, we do end up with a little bit of watermelon leftover and I’ve been using it to make myself a watermelon mojito on the weekends.

Ok, summer is definitely here. We are rocking 80+ temperatures every day and the farmer’s market and grocery store are filled with delicious items like summer melons. With the warmer weather and the longer days, we are doing a lot more “entertaining” {I use that term lightly because it is really me just putting out food and everyone hanging out} and so I am always looking for quick and easy recipes to throw together. Combine fresh summer melon with cheese and prosciutto for an easy appetizer that can’t be beat.

During the summer, we spend a ton of time outside on our deck enjoying the weather. Firing up the grill and creating peppercorn BBQ burgers is one of my favorite ways to enjoy a gorgeous summer evening. We do a ton of entertaining all year round. But, once the weather gets warm, I like to have people over every chance I can get. Mathlete didn’t spend months building our deck for it not to get used after all. This past weekend, we held our first big BBQ of the season to celebrate Memorial Day.
