I’ve talked a lot here and on social media about my adventure doing Whole30 this month (I even had a friend share her words of wisdom!). I started on January 5th without thinking about how that might impact our Super Bowl plans though. It is no secret that I am a HUGE fan of Thai food. From Thai Butternut Squash soup to a host of other things, we eat Thai inspired dishes a lot in our house. Mathlete spends a lot of time begging me to make/eat something other than Thai inspired dishes. So, when I was dreaming up recipes to serve at our upcoming party for the BIG GAME, I knew I wanted to bring a Thai influence into at least one of the game time food options. Our party will be filled with mostly men so I knew French fries would be a hit and decided to make Pad Thai French fries.

Happy 2015! I hope the new year is treating you well so far. Way back on January 1st {can you believe it is the 5th already?!}, I started Whole30 with at least half of the rest of the population it seems. Hosting events during the holidays {or any time} can really be stressful. There is the menu planning, guest counts and so many other things to think about. Finding a few items that you can use instead of having to make everything from scratch can be a true game changer. My favorite “holiday hack” is using premade meatballs and then dressing them up with a delicious sauce to totally transform them into the perfect party snack. A recipe that is always a hit at parties is my easy apricot meatballs.

Holy almost mid-November already. Where is time going? Have you started thinking about Thanksgiving yet? We like to try and get together for a little pre-Thanksgiving with our friends {a Friendsgiving if you will} so I am definitely heavily focused on Thanksgiving recipes right now. Our meals with friends tend to be the kind where you can grab a few things and eat them on the move between one group of friends to another or while trying to keep all the kids at the table and eating. These mini stuffing muffins are the perfect option for that kind of meal because they are one bite and require no utensils!

I’m a pumpkin lover. I actually eat pumpkin all year round and not just during the fall. But, when fall hits, I start adding pumpkin to just about everything {like cookies, dips, french toast and even hummus}. My most recent pumpkin tinkering came when I was making a queso dip for an upcoming fall party. Usually I just make my world’s best queso dip {seriously, that is not an exaggeration} but I wanted to try something new. So, I made pumpkin queso dip instead.

As a food lover, I am excited to be partnering with Pompeian to share with you a recipe using one of their olive oils. As always, all thoughts and opinions are my own.
For me, shrimp and butter are made for each. Think of shrimp scampi and how amazing it tastes basted in all that butter. I can think of very few times that I have cooked shrimp in anything but butter {unless it was shrimp cocktail of course}. August is National Olive Oil month and Pompeian is working to get people to take the Pompeian Pledge to swap butter for Pompeian olive oil in one of their favorite recipes. I recently made herbed shrimp pesto pizza and when I typically would have reached for the tub of butter!

A Reuben is one of those sandwiches that has a devoted following. You either love it or hate it. Mathlete is in the love category. If it is on the menu, Mathlete will order it without question. Me…I am in the other camp. I don’t care for it so we never make it at home. I would much rather have a balsamic chicken or kalbi beef sandwich instead!
But, with St. Patrick’s Day approaching, I decided to make some reuben dip for Mathlete to get him all the flavors of the Reuben sandwich without actually making a sandwich 🙂

Jalapeno poppers are one of those appetizers that you know EVERYONE will love. It is the perfect combination of spicy and cheesy in a little handheld bite. I see them at so many parties and actually served them for the first time this year at our annual Christmas party. Then, I started thinking about a way to easily take all those flavors on the go for tailgating or potluck parties {March madness, anyone?}. Turning the traditional appetizer into Jalapeno Popper Dip that you make ahead and bake whenever you want OR throw in the crockpot was what I came up with!
