Breakfast is always the most difficult meal for me. During the week, I am at work by 6am and my body definitely doesn’t feel like eating before that. So, I always need something I can take with me to work and enjoy later. Since I leave so early in the morning, these also need to be things I can put together the night before and grab on my way out of the door. In preparation for our recent trip to New York, with a 6:30am train trip, I put together an easy yogurt parfait the night before and it was delicious.

Do you ever feel like you are always falling behind? You see that mom {or dad} who just seems to have it all together and feel just ever so slightly inadequate. As a working mom of two kids, I get that feeling all the time. I live in a place where most moms stay at home and seem to have endless amounts of time to plan playdates, volunteer at school, supply cupcakes for the bake sale and 1,000 other things. Of course, they also manage to have their hair and makeup perfect while doing it. Me, I’m happy to have lunches packed on time and a decent breakfast for the kids. Can I tell you how much I love peaches? I mean like LOVE peaches. I only eat them during the summer when they are at their peak of freshness but I include them in tons of things while I can get them {like pizza}.

I am an eggs and bacon person when it comes to breakfast. Mathlete, he loves muffins and pastries. So, I try to make sure I keep some on hand for him so he can grab one on his way of the door to work or while we are having breakfast on the weekend. He is a huge granola and muesli fan so I work those into the muffins when I can. That is how these Cinnamon Muesli Muffins were born.
